Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Normandy has a cool, damp, thoroughly oceanic climate with rainfall spread evenly through the year, mild winters and summers that are warm rather than hot. Nothing about it drives sugar hard, and that is central to the region’s method rather than a limitation on it. Fruit ripens slowly under high humidity, hangs late into the autumn, and comes off orchards that are permanent pasture, so the juice arrives with modest sugar and — critically — with low levels of assimilable nitrogen, because grass takes up the nitrogen before the trees can. Low-nitrogen juice ferments slowly and stalls readily, which is a defect in a tradition that wants a dry cider and an asset in one that wants a sweet one. The same humidity produces heavy scab and canker pressure, and the wide spacing of the traditional orchard-meadow is partly a disease-management response to it.
Soils
The Pays d’Auge and the central Normandy plateaux carry heavy clay and clay-with-flint soils over chalk and marl, which hold water through the summer and keep the permanent grass beneath the trees growing — an important part of why the orchards can be grazed year-round and why the trees compete for nitrogen.
The orchards
How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.
- The classic form is the pré-verger: standard trees on vigorous stock at low density, standing over permanent grazed pasture, with cattle beneath. The orchard is part of a dairy farm, not a separate enterprise.
- Trees are haute-tige — high-stemmed, with the head lifted well clear of browsing cattle, and the crown allowed to reach full size over decades.
- Grass beneath the trees is not a floor treatment but a competing crop, and the resulting nitrogen limitation on the fruit is what makes keeving reliable. The orchard system and the fermentation method are a single package.
- Since the second half of the twentieth century a large share of commercial fruit has moved to basse-tige bush orchards on semi-dwarfing stock, planted at high density and harvested mechanically, which crop earlier and are easier to manage but do not reproduce the nitrogen conditions of the orchard-meadow.
- Fruit is shaken or allowed to fall and gathered from the ground, then held for a period before milling so that it softens and its starch converts further.
The words used here
Each of these names something the tradition does. They are given in the local language because that is the form a reader will meet them in — on a label, on a cider-house door, or in a conversation about how the cider is poured.

History
How cider making here came to take the shape it has.
- Cider displaced beer and, in places, wine across Normandy from the late medieval period onwards, and by the sixteenth century orchard planting and cider making were well enough established to be the subject of French agricultural writing.
- Distillation of cider into eau-de-vie — what became Calvados — was practised from the sixteenth century, and gave the region a second and more valuable use for its fruit that has shaped orchard economics ever since.
- The nineteenth century was the high point of Norman orchard area; cider was a daily drink for rural households and for farm labour, and the tree population was very large.
- The twentieth century removed most of it. Orchard grubbing subsidised in the post-war decades, the collapse of household making, competition from wine and beer, and the reorganisation of Norman dairying into more intensive systems together cut the standard orchard population drastically.
- From the 1970s onwards French appellation law was extended to cider, and a system of protected regional names — for cider, for perry and for Calvados — was built. This is the single most important difference between the French and English trajectories: France regulated its cider regions and England did not.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.
- Cider is served cold in a wide, shallow glass or a bowl and treated as a table drink, poured with a meal rather than drunk in pints through an evening.
- The expected register is sweet to off-dry and low in alcohol; cidre doux, demi-sec and brut denote residual sugar ranges, and a Norman brut is generally sweeter and lower in alcohol than an English dry cider.
- Cider is drunk with the region’s food — galettes, charcuterie, tripe dishes, the local cheeses — and the pairing is a matter of ordinary custom rather than of marketing.
- The route du cidre in the Pays d’Auge is a signed farm-visit circuit, and farm-gate sale of cidre fermier is a significant and long-standing route to market.
- Pommeau — unfermented or partly fermented apple juice fortified with Calvados and aged in wood — is drunk as an aperitif and is a protected category in its own right.
About Normandy
Normandy answers the question "what is cider for" differently from England, and almost everything else follows from that answer. A Norman cider is expected to be sweet or off-dry, aromatic, gently sparkling, cloudy-bright rather than crystal clear, and low in alcohol — commonly well below the strength an English farmhouse cider reaches. It is a drink for the table, poured with food, not a drink measured in pints.
Achieving that from ordinary fruit is difficult, because yeast given sugar and nitrogen will ferment the sugar out. The Norman solution is keeving: pectin in the fresh juice is gelled — traditionally by the fruit’s own pectin methylesterase acting with calcium, in modern practice sometimes with added enzyme and salt — and the resulting jelly floats as a brown cap, taking suspended solids, yeast and nutrient with it. The clear juice drawn from beneath is so short of assimilable nitrogen that fermentation proceeds very slowly and comes to a halt with substantial sugar remaining. Sweetness in a keeved cider is what the fruit brought, not what the maker added back.
That method depends on an orchard system. The pré-verger — full-size trees over permanently grazed grass — keeps fruit nitrogen low because the sward takes it first. A high-density modern orchard on bare, fertilised ground produces juice keeving handles far less predictably. This is the clearest example in cider of agronomy and fermentation method being one decision rather than two.
France also classifies its fruit differently. The French scheme uses five families — douce, douce-amère, amère, acidulée, aigre — and its separate amère class has no English equivalent: very high tannin with very low acid, used in small proportions to give a blend structure. A cultivar called bittersweet in England is not making the same statement as one called douce-amère in Normandy, and mapping between the two loses information in both directions.
The last structural difference is legal. From the 1970s France brought cider inside its appellation system, so Norman cider regions have specifications covering permitted varieties, orchard type, minimum juice content and method. English cider has no equivalent framework. This is why French cider regions can be described with precision — the definitions exist and are enforceable — and why comparisons that treat English regional names as though they carried the same weight are misleading.

- How does cider ferment — Yeast consumes the sugar in apple juice and produces roughly equal masses of ethanol and carbon dioxide, along with the esters and higher alcohols that give cider much of its aroma. In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.
- How do you stop cider from fermenting — By removing the yeast, by chilling, by filtering it out, by pasteurising, or by a combination — and in practice a home maker cannot reliably stop a ferment mid-way with chemicals alone. Sorbate prevents yeast multiplying but will not stop an active ferment.
- How is sparkling cider made
- What is keeving — Keeving is a technique for starving a ferment of nitrogen so that it stops before all the sugar is gone, leaving a naturally sweet cider. Pectin is made to gel and float as a brown cap, carrying nutrients and yeast out of the juice with it.
- What is racking in cider making — Racking is siphoning cider off the sediment it has thrown into a clean vessel, leaving the lees behind. It clarifies the cider and, in traditional practice, is also used to slow a ferment by removing yeast with the lees.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.

Opened on 2026-08-24, and it turned out that the entry CiderHQ had was describing a repealed instrument. The décret of 20 February 2025 replaces the 1953 décret and the 1987 one that amended it, and it changes the thing this site had been repeating: the doux, demi-sec and brut categories are no longer residual-sugar bands. They are now defined on acquired alcoholic strength together with density at 20 °C, an extra-brut tier has been added, and the four bands deliberately overlap so that a producer can place a product with a hydrometer rather than a sugar analysis. The pages that said otherwise have been corrected. What could not be done is a verbatim read: legifrance.gouv.fr returns HTTP 403 to retrieval, so the text was read through a summarising fetch and every operative figure was then checked independently against the UNICID interbranch briefing, which reproduces the table. The two agree.
