No aroma descriptors are recorded for Jaune de Vitré, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. About Jaune de Vitré

Jaune de Vitré is a Breton cider apple named for a town in Ille-et-Vilaine, and the French cider institute measured its juice in 2018 at 15.9 grams per litre of malic acid. For scale: Kingston Black, the English bittersharp with a reputation for acidity, runs about 5.8 grams per litre on the Long Ashton figures, and a Normandy bittersweet runs 2 to 3.

Fruit that sharp is a tool rather than a cider. Its use is to raise the acid and drop the pH of a must built on low-acid bittersweets — a must at pH 4.2 is a microbiologically nervous thing and one at pH 3.6 is not, and a small proportion of fruit at pH 3.3 moves the blend a long way. That Brittany keeps more sharp fruit than Normandy is a real regional difference and not merely a matter of taste; it changes how the ciders of the two regions are built.

Its gravity is the second useful thing about it. At 1.064 it carries more sugar than most of the varieties measured beside it, so the acid arrives without diluting the blend’s potential alcohol — which is not true of every sharp.
