The strongest single-varietal tradition of any French cider apple. Made pale, sharp, low in alcohol and lightly sparkling, usually with some residual sugar, and deliberately without the oxidative and tannic character of a Norman cider.
About Guillevic
Guillevic is the exception that proves several rules about French cider. It is sharp rather than bittersweet, it is pale rather than golden, it is aromatic rather than tannic, and it is bottled under its own name — none of which fits the picture of French cider that an English-language reader is likely to carry. It comes from the Morbihan in southern Brittany, and the cider made from it is a regional speciality with a quality mark attached.
The style follows the fruit closely. Guillevic cider is made pale and fresh: pressed quickly to limit oxidation, fermented cool, kept low in alcohol, left with a little sugar and given a light sparkle. Everything a Norman producer does to build depth — long maceration, oxidative handling, keeving, extended ageing — would work against what this fruit offers, and Breton producers accordingly do none of it.
Its acid is a technical asset beyond taste. Breton cider fruit as a whole sits at a high pH, and the presence of a genuinely acid cultivar in the region gives makers a way to bring blends into a range where sulphite is effective and lactic spoilage is less likely. Guillevic performs that role even where it is not the star of the bottle.
It also shows the limits of classification most economically of any fruit in this file. Under the French scheme it is acidulée and nothing more; under the English scheme it would be a sharp. Neither label mentions the aroma, which is the only reason anyone outside a blending shed has heard of it.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.
