About Judor
Judor is a reminder that French cider fruit is not a fixed inheritance. The national breeding programme set out, in the second half of the twentieth century, to produce cider cultivars with the analytical characteristics French blends needed and the disease resistance French orchards lacked, and Judor is one of the results: a sharp apple with major-gene scab resistance, bred to slot into the acidulée position in a blend.
What it offers a grower is not flavour but agronomy. Scab is the dominant fungal problem in Atlantic apple growing, and a cultivar that resists it can be cropped with far fewer sprays, which matters commercially and matters more in organic production. The juice is straightforwardly acid with no tannin worth counting; it is doing the same job Petit Jaune did, more reliably and with less input.
The resistance should be described carefully. Single major-gene resistance to scab has been overcome by adapted races of the pathogen in European apple growing, and a resistance rating for any Vf-type cultivar is a claim about the current state of a moving target. It is honest to say Judor has been resistant and dishonest to say it is immune.
Its existence also complicates the romantic account of French cider. A blend labelled as traditional Norman cider may well contain a cultivar bred in a research station within living memory, and this is normal rather than scandalous — but a reader should know it is possible.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.
