Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

About Blanquina
Blanquina is named for its pale skin and is one of the most consistently praised cultivars in Asturias. The Consejo Regulador characterises it at 4,7 g/L of total acidity as sulphuric acid and 0,8 g/L of polyphenols, which places it in the ácido block — not the semi-acid one CiderHQ recorded before reading the designation’s own data.
The agronomy explains the planting as much as the juice does. The tree is vigorous to very vigorous, crops heavily, flowers fairly late, and carries low susceptibility to fungal disease. In Asturias those four properties together are worth a great deal, and a cultivar that has them will be planted whether or not its juice is remarkable.
What the juice is not is phenolic. At 0,8 g/L Blanquina sits at the bottom of the Asturian phenolic range, which is itself far below a West Country one. Anyone approaching sidra natural expecting the tannic grip of an English cider is approaching the wrong drink: the structure here comes from acid, and the cultivars that carry it were selected for exactly that.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
