The DOP Sidra de Asturias covers sparkling cider as a distinct product from sidra natural, with its own production requirements. The two are not interchangeable within the designation and are not meant to be compared as versions of one thing.

About Sidra espumosa
Sparkling Asturian cider exists because the region’s producers wanted access to a market that still cider could not reach, and because the underlying material suits the format unusually well. A high-acid, low-sugar, fully dry base is exactly what a traditional-method sparkling process wants: the acid gives the finished wine its line, the low residual sugar makes the second fermentation predictable, and the modest alcohol leaves room for the additional degree or so the second ferment adds.
The process follows sparkling wine practice closely. A finished dry cider is bottled with a measured sugar and yeast addition, sealed under crown cap, and fermented in the bottle where the carbon dioxide dissolves under pressure. It rests on its lees for a period the producer chooses, is riddled to bring the deposit into the neck, disgorged, topped up and corked. Some producers use tank fermentation and counter-pressure filtration instead, which is faster and gives less lees character.
The difference from sidra natural is not merely one of bubbles, and the Asturian designation is right to treat them as separate products. Still Asturian cider is cloudy, oxidative, volatile and served in small poured measures within seconds of aeration. Sparkling Asturian cider is bright, protected from oxygen throughout, and served like a sparkling wine in a flute or tulip. A producer making both is making two drinks with two sets of criteria, from the same orchards.
What a drinker meets is a taut, dry, high-acid sparkling cider with a fine bead, an apple-skin and citrus-edged aroma, a lees note where the ageing has been long, and a finish that is more mineral than fruity. It sits closer to a dry sparkling wine than to any English or French cider, which is a consequence of the fruit rather than of the method.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- A sparkling wine method applied to a high-acid, low-tannin cider base. The result is closer to a sparkling wine in structure than to a West Country sparkling cider.
- Autolytic character where the cider has spent time on lees — a bready, faintly savoury weight that is the only thing here adding body, since the fruit contributes almost no tannin.
- Acid, which the carbonation sharpens further. Asturian fruit is high in acid to begin with, and carbon dioxide adds a perceived sharpness of its own, so this can be a very taut drink and the balance depends on the dosage more than on the base.
What gets misread
- Expecting sidra natural. This is a different product from the same region made by a different method.
- Reading the absence of the escanciado lift as a loss. The long pour exists to aerate and briefly carbonate a still cider; a cider that already carries gas has no use for it, and pouring this from height would simply throw the mousse away.
Cold, in a stemmed glass, poured normally. This is the Asturian style that is not poured from height.

- Sidra natural — Whether the gas is in the bottle. Natural is still and is aerated by the pour.
- Sparkling cider — The base. A Spanish sparkling cider is built on sharp, tannin-free fruit.

A second fermentation in the bottle the cider will be sold in, followed by riddling the deposit into the neck and expelling it, so the drink is both bottle-fermented and clear.
Secondary fermentation
Any fermentative event that follows the primary ferment — residual sugar refermenting, a deliberate second alcoholic fermentation, or the malolactic conversion of the maturation phase.
Lees ageing
Deliberately holding a cider or perry on its fine yeast deposit so that autolysing cells release material that changes texture and foam behaviour.
Transfer method
Fermenting in bottle for the character, then emptying the bottles under counter-pressure into a tank, filtering and refilling to remove the deposit without riddling.
Bottle pressure management
Matching the pressure a carbonated cider will actually generate to glass that can contain it, taking account of temperature and of any fermentable sugar left in the bottle.
Filtration

The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.
Gushing
Cider that erupts from the bottle on opening, either because it is over-pressurised or because something in it is nucleating the dissolved gas violently.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
