Published by the Consejo Regulador of DOP Sidra de Asturias as “Ácido amargo”, on total acidity 7,1 g/L as sulphuric acid and total polyphenols 1,3 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

Fiercely acid, with more phenolic weight than the region’s pure acid cultivars carry. Austere rather than fruity, and not an apple anybody eats by choice.

It has been made alone. The result is very dry and very sharp, and Asturian practice remains emphatically a blending tradition.
About Regona
Regona is among the highest-tonnage cultivars in Asturian cider orchards, and the Consejo Regulador records why it is worth planting: 7,1 g/L of total acidity expressed as sulphuric acid, the highest figure among the varieties it characterises. In the malic convention used elsewhere that is close to 9,7 g/L. It is a very sharp apple by any national standard.
The designation places it in ácido-amargo rather than plain ácido, on 1,3 g/L of polyphenols. That is a small number beside a Somerset bittersweet and a meaningful one inside Asturias, where much of the acid fruit sits at 0,8. The distinction matters to a blender: Regona brings a little grip along with its acid, and the pure acid cultivars do not.
It flowers very late and ripens in the last ten days of November, and it is characteristically gathered from the ground rather than picked. Asturian practice lets fruit fall and collects it in successive passes, which is why the cultivar’s ability to lie on wet grass without rotting matters as much as its juice does.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.

Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
