- Apples need the cool, wet Atlantic climate of the northern coast. The Meseta behind it is hot, dry and continental, and it is wine country rather than cider country. The line between the two is a climate boundary, not a cultural one.

Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The coastal platform of central-eastern Asturias is a strip rarely more than twenty kilometres wide between the Cantabrian Sea and the first mountain front, and it is the mildest and most sheltered orchard ground the region has. Winters are frost-light, summers cool and cloudy, and rainfall high but a little lower than in the mountains behind. Sea influence damps the temperature range in both directions, so trees experience neither the deep winter cold nor the summer heat found inland in Spain, and the growing season is long but low in accumulated heat. Fruit ripens slowly and comes in at moderate sugar with high acid retained, which is the composition the region’s cider is built on. Persistent autumn rain during harvest is the limiting practical factor, because fruit gathered wet from grass has to be sorted and dried before it can be milled without carrying rot into the vat.
Soils
Deep, moist, slightly acid soils over marine terraces and valley alluvium, generally more fertile and better structured than the thin soils of the mountain slopes behind. They hold a strong permanent sward, and the trees compete with it for nitrogen.
The orchards
How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.
- This is the densest concentration of pumaradas in Asturias: standard trees in grass on the coastal terraces and lower valley sides, many of them small parcels attached to individual households.
- The comarca supplies a disproportionate share of the fruit used by the region’s cider houses, and many llagares are sited here precisely because the fruit is.
- Both traditional standard orchards and newer, more closely planted commercial orchards operate side by side, with regional research supporting variety selection for the newer plantings.

History
How cider making here came to take the shape it has.
- The concentration of cider making on this stretch of coast reflects both the quality of the orchard ground and access to the sea: the ports here shipped cider along the Cantabrian coast and, later, to the Americas.
- Villaviciosa became the centre of the industrial, bottled, carbonated cider trade that grew from nineteenth-century emigration and export demand, giving the comarca a large-scale sector alongside its farmhouse one.
- Nava has housed the region’s cider museum since the late twentieth century, and the comarca as a whole markets itself under the name Comarca de la Sidra, which is a modern administrative and tourism designation rather than a historic one.
- The area falls within the production zone of the Asturian protected designation, and much of the fruit meeting its variety requirements is grown here.
- Orchard fragmentation and rural depopulation are the persistent structural problems, and both push the sector towards buying fruit in from many small holdings rather than growing it at the press.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.

About Asturian coastal comarca
The cider comarca is the part of Asturias where the whole system is visible in one place. Within a strip of coast twenty kilometres wide are the densest orchards in the region, the largest number of working cider houses, the industrial bottling sector, the cider museum and the towns whose festivals are built around the pour. If a reader wants to understand how the Asturian orchard, press and drinking practice connect, this is the ground on which they connect.
Its physical advantage is shelter and moderation. The sea keeps the winters frost-light and the summers cool, the mountain front behind takes the worst of the weather, and the marine terraces carry deeper and better soils than the slopes above them. Fruit here ripens slowly to moderate sugar and keeps its acid, and the orchard sits in permanent grass that competes for nitrogen — a combination that produces exactly the low-alcohol, high-acid, slow-fermenting juice the regional style is built on.
The structural problem is fragmentation. Orchards are small parcels in many hands, often attached to households rather than to farms, so a cider house of any size buys fruit in from a large number of growers. That has consequences for consistency, for traceability under the protected designation, and for who bears the risk when biennial bearing takes a year’s crop out.
The comarca also contains the split that runs through Asturian cider as a whole. The same district makes the still, unfiltered, hand-poured sidra natural drunk locally and the filtered, carbonated, sweeter bottled cider that took the name of Asturian cider around the Spanish-speaking world. They share fruit and geography, and almost nothing else.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
