Published by the Consejo Regulador of DOP Sidra de Asturias as “Ácido”, on total acidity 5,3 g/L as sulphuric acid and total polyphenols 0,8 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

About Raxao
Raxao and Blanquina are the two names that come up whenever an Asturian producer describes what a serious blend is built from, and both sit in the acid block rather than the semi-acid one they are often assigned to in English writing. Raxao is characterised at 5,3 g/L of total acidity as sulphuric acid and 0,8 g/L of polyphenols — high acid, and the least phenolic reading in the Asturian register.
The reputation therefore rests on something the analysis does not measure. What producers say about Raxao is that it is aromatic and regular, and neither aroma nor cropping regularity appears in a two-number characterisation. This is a useful limit to keep in view: the technological blocks sort fruit for blending arithmetic, not for quality, and the Consejo does not claim otherwise.
The tree is vigorous to very vigorous, flowers very late, and ripens in the first half of November. Its susceptibility to fungal disease is recorded as very low to moderate, which in the wettest cider region in Europe is a substantial part of why it is planted as widely as it is.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
