Published by the Consejo Regulador of DOP Sidra de Asturias as “Dulce amargo”, on total acidity 1,2 g/L as sulphuric acid and total polyphenols 1,8 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

On its own

Not suited to a single-varietal cider

Alone, the acid would be far too low for a safe ferment. Asturian practice would not attempt it, and the fruit is scarce enough that nobody has needed to find out.

About Coloradona

Coloradona is the nearest thing Asturias has to a West Country bittersweet, and it is instructive precisely because it is not one. Its acidity is 1,2 g/L expressed as sulphuric acid and its polyphenols 1,8 g/L — genuinely low-acid, genuinely phenolic — and the Consejo files it as dulce amargo, sweet-bitter.

An English reader will want to call that a bittersweet, and the translation is where the information goes. The Asturian scheme has nine blocks rather than four, and dulce-amargo means low acid with appreciable phenolics in a population whose phenolic ceiling is 2,4 g/L. A Somerset bittersweet is measured against a quite different distribution, and mapping one label onto the other implies an equivalence the numbers do not support.

The tree crops poorly, which is the practical constraint. A cultivar with a distinctive contribution and low yield ends up as a minority component of a blend regardless of how well it fits, and Coloradona is planted accordingly.
