- Why the band is so narrow
- Apples need the cool, wet Atlantic climate of the northern coast. The Meseta behind it is hot, dry and continental, and it is wine country rather than cider country. The line between the two is a climate boundary, not a cultural one.

- The largest Spanish cider region by a wide margin, with a protected designation of its own and a technological classification of its cultivars into acid, bitter and sweet groups that has no counterpart in the English scheme.

Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Asturias sits on the Cantabrian coast between the sea and a mountain wall that rises above two thousand metres within forty kilometres of the shore. The result is an oceanic climate with high rainfall spread through the year, mild winters and summers that are warm without being hot. Fruit ripens slowly under cloud rather than quickly under sun, and the growing season rarely delivers the heat accumulation that drives sugar hard. Asturian juice therefore tends to run lower in sugar and higher in acid than fruit from Normandy or Somerset, which is a large part of why the region ferments to a dry, sharp, comparatively low-alcohol cider rather than a sweet or strongly tannic one. The same humidity that suits the trees also suits fungal disease, and getting a gathered crop dry enough to mill in a wet October is a practical problem rather than an afterthought. Altitude matters as much as latitude: orchards belong to the coastal strip and the lower valleys, and effectively stop where the mountains begin.
Soils
Deep, moist, moderately acid soils on the coastal platform and in the valley floors, developed over sandstone, limestone and slate. They hold water well in a wet climate and support permanent grass beneath the trees, which is one reason juice nitrogen stays low.
The orchards
How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.
- The traditional orchard is the pumarada: standard trees on vigorous stock in permanent grass, grazed or mown, on the lower slopes and coastal platform, often attached to a smallholding rather than to a large farm.
- Asturian cider cultivars are a distinct population selected for acid and for a wet climate, and the protected designation maintains a list of permitted varieties drawn from it.
- Biennial bearing — a heavy crop one year and almost none the next — is a defining problem of the Asturian orchard, and blending across varieties with offset cropping cycles is one of the practical responses to it.
- Modern replanting since the late twentieth century has used more closely spaced trees on semi-vigorous stock, supported by regional research into variety selection and orchard systems.
- Asturian cider fruit ripens late: most of the designation’s permitted list is gathered through November, and a few varieties are not ready until its final days. Pressing therefore runs into winter, and a llagar is still working when the English and Norman seasons have closed.
- Fruit is shaken down and gathered from the ground, then sorted, because a crop gathered in a wet autumn carries rot that will otherwise reach the vat.

History
How cider making here came to take the shape it has.
- Cider making in Asturias is documented from the medieval period in monastic and municipal records, and by the early modern period it was the ordinary drink of a region where the climate ruled out viticulture across most of its territory.
- The coastal orientation of the region gave cider a maritime role: it travelled as ships’ provision, and Asturian emigration in the nineteenth century carried both the drink and the making of it to Cuba, Argentina and elsewhere in the Americas.
- That emigration also produced the sparkling, filtered, sweeter sidra achampanada made for export and for festive consumption, a nineteenth-century commercial development quite separate from farmhouse sidra natural and now a substantial industry in its own right.
- The twentieth century saw orchard area contract and then partially recover, with regional agricultural research from the later decades of the century working systematically on Asturian cultivars, orchard systems and fermentation.
- A protected designation of origin for Asturian cider was established in the early years of the twenty-first century, setting out the permitted varieties, production zone and method, and formalising the distinction between sidra natural and later filtered and carbonated categories.
- Asturian cider culture has since been recognised as intangible cultural heritage — a designation that attaches to the social practice of pouring, the cider houses and the season rather than to the liquid, and which is worth distinguishing from the protected designation that governs the drink.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.
- Cider is poured escanciada: the bottle is held high in one hand and the glass low in the other, and a thin stream is dropped the length of the arm so that it breaks against the inside of the glass. The purpose is mechanical — the impact throws off dissolved carbon dioxide and momentarily softens the cider’s hard edge — and the effect lasts only seconds, which is why the measure is small and drunk at once.
- A poured measure is a culín, a mouthful or two. The last drops are thrown away, traditionally onto the floor of the cider house, both to rinse the rim before the glass passes to the next drinker and because the poured cider has already lost its condition.
- A single glass is commonly shared around a group in rotation, each person taking their culín immediately after it is poured. The practice is functional rather than ceremonial and is unremarkable to participants.
- The chigre — a cider bar — and the llagar — a working cider house with its own presses and vats — are distinct institutions, and the espicha, a standing meal with cider drawn straight from the barrel, is the traditional communal form.
- Asturian cider vocabulary is Asturian rather than Castilian in much of its detail, and terms such as llagar, culín and pumarada belong to the regional language.
About Asturias
Asturias makes a cider that an English or Norman drinker will find difficult to place, and the difficulty is the point. Sidra natural is bone dry, still, cloudy, low in alcohol, high in acid, and carries a distinctly lactic and faintly acetic character that in an English competition would be read as a fault and here is read as the definition of the style. It is not an unfinished cider or a failed one; it is what the region has been making deliberately for centuries.
The chemistry follows the climate. Asturian fruit ripens under cloud in a wet oceanic season and comes in with modest sugar and substantial acid, so alcohol runs low and the finished cider is sharp. Fermentation is wild, in wooden or stainless vats, and malolactic conversion runs to completion, turning the hard malic acid into softer lactic acid and generating the buttery and slightly farmyard notes that sit under the fruit. The absence of filtration keeps texture and body in a liquid that would otherwise be very lean.
The pour is not decoration. Still cider at this acidity, poured gently, tastes hard and flat. Dropping a thin stream the length of an arm so that it shatters against the glass wall aerates it, blows off dissolved carbon dioxide and briefly changes the way the acid registers on the palate — an effect that lasts perhaps twenty seconds, which is precisely why the measure poured is a mouthful and why the remainder is thrown out. Every visible element of the practice, including sharing one glass around a group, follows from that short window.
Spain classifies its fruit on its own terms. The Asturian scheme sorts cultivars as dulce, ácida, semiácida, amarga and amarga-ácida, on thresholds fitted to Asturian fruit, and its semi-sharp class — the largest group among the permitted varieties — has no equivalent in the English four-way split at all. Reading Asturian apples through Long Ashton categories therefore loses the single most populous class in the region’s orchards.
The region also runs a second, quite separate industry: filtered, carbonated, sweeter sparkling cider developed in the nineteenth century for export and for festive consumption, which is what most of Spain and much of Latin America means by the word. Both are Asturian. Only one of them tells you what the region drinks on an ordinary evening.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
