Published by the Consejo Regulador of DOP Sidra de Asturias as “Semiácido”, on total acidity 3,9 g/L as sulphuric acid and total polyphenols 1,3 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

No aroma descriptors are recorded for Solarina, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. About Solarina

Solarina is a working cultivar of the Asturian middle rank: very vigorous, heavy-cropping, low in disease susceptibility, and ripening across the second and third ten-day periods of October. Those properties, rather than any distinction in the juice, are what put it in orchards.

The Consejo Regulador characterises it at 3,9 g/L of acidity and 1,3 g/L of polyphenols, placing it in the semiácido block. The phenolic figure is worth noting: at 1,3 it carries meaningfully more than the 0,8 that Raxao and Blanquina bring, which gives a blend a little grip from a fruit chosen mainly for volume.

It is often described as a sharp planted for reliable acid. The published figures put the acid a step lower than that implies and the phenolic contribution a step higher, which changes what the fruit is actually for in a blend.
