Published by the Consejo Regulador of DOP Sidra de Asturias as “Semiácido”, on total acidity 3,9 g/L as sulphuric acid and total polyphenols 1,1 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

Clean and moderately acid with a modest aroma; a workmanlike fruit that contributes balance and gets out of the way.

No aroma descriptors are recorded for Perico, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

About Perico

Perico is one of the more widely planted cultivars in modern Asturian orchards, and the Consejo Regulador places it in the semiácido block on 4 g/L of acidity, or 3,9 to be exact, with 1,1 g/L of polyphenols — a step milder than the acid-block cultivars it is often listed beside.

Its useful properties are agronomic. The tree is vigorous, flowers very late — which in a maritime spring is real frost insurance — ripens in the second ten days of November, and carries moderate to low susceptibility to fungal disease. Cropping is recorded as moderate rather than heavy.

It is worth being plain that a semi-acid Asturian cultivar has no English equivalent. The English scheme has no middle: fruit is sharp above 0,45% acid and sweet below it, with nothing in between, and a cultivar like this one falls into a category the four-way division simply does not contain.
