How does Asturias classify its cider apples, and why can the figures not be compared with English ones?

Asturias does not sort cider fruit into four classes. It sorts it into nine technological blocks, on acidity and total phenols, and the blocks are not the English quadrants with Spanish names on them. A fruit can be semiácido-amargo or amargo-semiácido — the order of the words is the difference between mostly semi-acid and somewhat bitter, and mostly bitter and somewhat semi-acid — and no English class maps onto either.

The acidity is published in grams per litre of sulphuric acid, the Spanish convention, not as malic acid the way English and North American analyses report it. The two are not interchangeable: sulphuric-acid equivalents run about 1.37 times lower than malic-acid equivalents for the same juice.
