Escanciar: the Asturian long pour
Why do Asturians pour cider from so high, and what does it actually do?

Escanciar is the practice of holding the bottle above the head and the glass at hip height, so that a thin stream falls most of a metre and strikes the inside wall of the glass.
The impact does two physical things at once: it breaks the stream apart, releasing dissolved carbon dioxide as fine bubbles and a short-lived foam, and it exposes a large surface area of cider to air, volatilising aroma compounds.
The effect lasts seconds, which is why only a small measure — a culín — is poured at a time and why it is drunk immediately. Everything else about the etiquette follows from that fact.
What the pourer does
The bottle is raised in one hand above and slightly behind the head, held near its base. The glass is held in the other hand at hip level, tilted so that the falling stream lands on the inner wall rather than on the surface of the liquid already in it. The pourer looks outward rather than at the glass — sighting the stream is a matter of practice, not of watching — and the stream is cut off sharply after a short pour by returning the bottle to the vertical.
The quantity delivered is small: a couple of fingers in the bottom of a wide, thin-walled glass, conventionally called a culín or culete. A standard 70 cl bottle yields several such measures, which is why a group works through bottles rather than glasses.
The pour is aimed at the wall of the glass for a reason. A stream striking the glass shears and spreads; a stream falling into standing liquid mostly plunges. The wall impact is what produces the fine, even foam that Asturian drinkers judge the pour by.
What it does to the cider
Sidra natural is fermented dry and bottled still, but it is not gas-free. It carries dissolved carbon dioxide from fermentation at a level far below that of a sparkling cider — enough to be in solution, not enough to form a head on its own. Left in a glass it does nothing at all.
Agitating and shearing a supersaturated liquid supplies exactly what dissolved gas needs in order to leave solution: surface, turbulence and nucleation opportunity. The falling stream, the impact and the splash together drop a large quantity of dissolved carbon dioxide out of solution in under a second, producing the transient bubble and the momentary head. That effervescence begins collapsing immediately, and within perhaps half a minute the cider in the glass is flat again.
The same turbulence does a second job. Aroma compounds — esters, higher alcohols and the rest of the volatile fraction — leave a liquid at its surface, and the pour momentarily creates an enormous amount of surface. The result is a burst of aroma above the glass and a change in how the cider reads on the palate for the few seconds afterwards. Asturian drinkers describe this as the cider being briefly awake, and the technical description is not different in substance.
A third and less-discussed effect is mechanical rather than chemical. Vigorous aeration of a still, unfiltered, relatively soft cider blunts the impression of acidity slightly and lifts the texture, which is part of why a poured culín and a glass of the same cider poured gently taste noticeably different.
The culín and the etiquette
Because the effect is measured in seconds, the measure is small and the drinking is immediate. A culín is poured, handed over or picked up, and drunk in one. Holding it, sipping it or setting it down defeats the entire operation, and doing so marks the drinker as not understanding what has just been done for them.
The last mouthful is not drunk. It is thrown to the floor or into the trough at the foot of the bar. This serves a specific purpose in the traditional service, where one glass circulates among a group: the discarded remainder rinses the rim before the glass passes on. The wet floor of a sidrería is a direct consequence of this and is not a sign of a disorderly room.
The pourer serves others rather than themselves, and there is an order to it. Where a member of staff pours, they attend the table and the drinkers take the glass as it is filled. Where the group pours for itself, the bottle circulates and whoever holds it serves. Neither arrangement involves anybody pouring their own and drinking it.

The mechanical pourer, and the argument about it
Devices that deliver the same falling stream from a fixed height are now widely installed in Asturian establishments. A bottle is placed in the machine, a button is pressed, and a measured stream is delivered into a glass at the correct distance and angle. The physics is identical; the labour is not.
Opinion within Asturias is genuinely divided. The case for the machine is consistency, speed and the reduction of spillage and waste. The case against is that the pour is a social act performed by a person for other people, and that mechanising it removes what the custom was, leaving only what it does. Both positions are held by people with a long relationship to the drink and neither is a tourist opinion.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
