The Asturian regulating council maintains a list of permitted varieties and production rules for cider inside its designation, and the Basque Country has its own protected name. Most sidra natural is made outside either scheme, so the designations describe part of the tradition rather than defining it.
What makes it this style
- The cider is fermented completely dry, with nothing added and nothing taken away: no sugar, no water, no carbon dioxide, no filtration.
- The fruit is a local high-acid population — Asturian and Basque cultivars classified under their own regional systems, not under the English or French ones.
- Fermentation is spontaneous and is followed by a malolactic conversion, which is expected rather than incidental.
- The cider is still in the bottle and is poured from a height — escanciar in Asturias, txotx from the barrel in the Basque Country — to generate a brief effervescence in the glass.
What varies inside the category
Every style covers a range. This is what legitimately differs between two examples that are both correctly called by this name.
- Volatile acidity and ethyl acetate, which are present in most examples and which the tradition tolerates at levels other cider cultures would fault.
- Acetaldehyde and the degree of oxidative character, which change how sharp and how nutty the cider reads.
- How much the cider pega — how well it holds its brief sparkle after pouring, which is a quality criterion in Asturias and is not a chemical measurement.

About Sidra natural
Asturian and Basque cider is a complete tradition on its own terms, and it is misread whenever it is described as a variant of something else. Its fruit is not the West Country’s and not Normandy’s: the northern Spanish cultivar populations were selected locally and are classified under their own systems, in which the dominant classes are the sharp and semi-sharp — ácida and semiácida — rather than the bittersweets that define England and France. The juice that results is high in malic acid, moderate in phenolics and moderate in sugar.
The making is defined by what is not done. Nothing is added at any stage. The fruit is milled and pressed — traditionally in a llagar using a large press, now often with modern equipment — and the juice is left to ferment on its own population in chestnut or, more often now, stainless vessels. The ferment runs through the winter and is followed by a malolactic conversion in which lactic bacteria turn the sharp malic acid into softer lactic acid, dropping the total acidity and adding a distinct lactic and slightly buttery layer. That conversion is part of the design, not an accident.
The result is a cider that would be read as faulty by a technical panel trained on modern commercial cider, and the honest thing to say is that the tradition and the panel are using different criteria. There is measurable volatile acidity. There is ethyl acetate. There is acetaldehyde, and there is a degree of oxidation. In Asturian terms these are the flavour: a cider without them is thin and characterless. In competition terms they are defects. Neither judgement is neutral, and a reference work should say so rather than adopting one silently.
Service is not decoration; it is part of the definition. The cider is still, and it is poured in a thin stream from a bottle held high into a wide glass tilted below, so that the liquid breaks on the side of the glass and releases dissolved carbon dioxide as a momentary froth. Only a couple of centimetres — a culín — is poured at a time, drunk immediately while the effervescence lasts, and the last drops are thrown away. In the Basque cider houses the equivalent is txotx: cider drawn directly from the barrel in a stream that drinkers catch in their glasses. Both practices exist because the cider is unfiltered, still and slightly reduced, and pouring aerates and lifts it.
The social setting completes it. Asturian sidrerías and Basque sagardotegiak are places where the cider is drunk standing, in small measures, over a long evening, with food built around it — salt cod, chorizo, beef, sheep’s cheese and quince paste in the Basque cider-house menu. Removing the cider from that setting and judging it as a bottled product against international norms produces a systematically unfair reading, which is why this record describes the practice rather than only the liquid.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Volatile lift, which is expected here and is not expected in most other traditions. A degree of acetic and ethyl acetate character is part of what the drink is.
- Acid, which is the structure. There is almost no tannin, so the palate is carried entirely by sharpness.
- What the escanciado does. Pouring from a height breaks the surface, releases dissolved carbon dioxide and briefly aerates the cider, and the drink is designed around being assessed in that state.
What gets misread
- Assessing it in a stemmed glass at cellar temperature. Poured conventionally into a tasting glass it reads as a faulty cider; the service is not decoration.
- Reading the cloudiness or the sediment as a fault. Both are ordinary.
- Applying a West Country tannin expectation. There is none to find and its absence is not a deficiency.
Poured from height into a wide, straight glass, a culete at a time, and drunk immediately. The gas and the lift both disappear within a minute, which is why the measure is small.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Sidra espumosa — Whether the gas is in the bottle or is put there by the pour. Natural is still and is aerated by escanciado; espumosa is a sparkling wine-method product.
- Volatile acidity as a fault — Whether the acetic note has taken the fruit with it. The expected lift sits behind the apple.
- Euskal Sagardoa — A Basque protected designation with its own cultivar list and rules, rather than the Asturian tradition under another name.

Fruit storage before milling
Holding a gathered crop between harvest and the mill, and managing what respiration, water loss and spoilage do to it while it waits.
Milling
Reducing whole fruit to a pulp so that the press has cell walls it can drain, rather than intact apples it can only bruise.
Twin-screw pressing
Continuous pressing in which an auger drives pomace along a perforated barrel against a restriction, extracting juice under high shear and compaction.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Malolactic fermentation
A bacterial conversion of sharp malic acid into softer lactic acid, which lowers acidity, changes aroma, and in most traditional cider happens whether it was planned or not.
Tank maturation
Resting cider in stainless steel or a lined vessel, where the point of the container is that it contributes nothing and admits almost no oxygen.
Racking
Moving cider off the sediment it has thrown, which both cleans the liquid and — by taking yeast and nitrogen away with the deposit — slows what is left of the ferment.

Euskal Sagardoa / Sidra Natural del País Vasco
The Basque protected designation for natural cider, whose current specification runs across the French frontier as well as the Spanish one — no sugar, no water, no filtration, and carbon dioxide only from the ferment itself.
Food
Interactions rather than suggestions. Each explains the mechanism, so you can extend it to a dish that is not listed.
- Cabrales — The established Asturian pairing, and one that survives examination: very high acidity and the transient carbonic prickle of the *escanciado* pour clear an extremely fatty paste, while the cheese’s enormous salt load suppresses the cider’s own bitterness and volatile edge.
- Charcuterie — Cured pork and sharp dry cider are eaten together across northern Spain; the acidity clears fat that is served cold and therefore firm on the palate, and the salt suppresses the cider’s rough edges.
- Chorizo — Chorizo cooked in cider is standard Asturian practice, and drinking the same cider alongside works for the same reason: severe acidity against a very high paprika-laden fat load, with the carbonic prickle of the pour adding to it.
- Pork belly — This is the highest fat load in the pork section, and very high acidity is the most direct answer: salivary flow rises sharply and the lipid film is carried off between mouthfuls rather than accumulating across the plate.
- Ceviche — Very high malic and lactic acidity plus a carbonic prickle: structurally this is about as close as the cider family comes to matching a lime cure.
- Idiazábal — The neighbouring Asturian style works by the same mechanism, with slightly more volatile-acid character and the same sharp, low-sugar structure.
- Manchego — Ewe’s milk carries very high fat, and sidra natural’s combination of high malic and lactic acidity with the transient carbonic prickle raised by pouring from height clears it more effectively than acidity alone.
- Salt cod — The Asturian equivalent, working on the same combination of oil and salt.
- Sardines — Grilled sardines with sharp dry cider is standard practice along the Atlantic coast of Spain, and the mechanism is straightforward: oily fish leaves a heavy and rather persistent film, and severe acidity is the most effective answer.
- Steak with chimichurri — Very high acidity meets a vinegar-dressed dish on its own terms and clears the beef fat at the same time.
- Txuleta — The Asturian style does the same work by the same route.
- Oysters — The same requirements met more forcefully; the volatile-acid edge of an Asturian pour is either a virtue or a distraction depending on how mineral the oyster is.

Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Ethyl acetate taint
A solvent, nail-varnish or pear-drop aroma from ethyl acetate, the most abundant ester in cider and the one that turns from lift to fault over a narrow range.
Acetaldehyde excess
A bruised-apple, green-nut or sherry aroma from acetaldehyde, produced by oxidation, by film yeast, or left behind by a ferment that was interrupted.
Oxidation
The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.
Mousiness
A retronasal taint of mouse cage, stale popcorn or crackers that appears only after swallowing — and that a substantial fraction of people cannot detect at all.
Film yeast growth
A pale, powdery or wrinkled film of aerobic yeast growing on the surface of a standing cider, consuming alcohol and acid and producing acetaldehyde.

Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
