It is a regional origin instrument administered through Basque institutions; much Basque cider is made from imported fruit and falls outside it, which is precisely the practice the designation was created to distinguish itself from.

About Euskal Sagardoa
Basque cider is older than the designation that now protects part of it, and the two should be kept distinct. Sagardoa — literally apple wine — has been made in Gipuzkoa and the surrounding provinces for centuries, was provisioned onto Basque fishing and whaling vessels, and is embedded in the language and the calendar in a way that has no equivalent in most cider regions. The designation is a recent instrument created to identify cider actually made from Basque-grown fruit, in a market where a good deal of Basque cider is made from apples brought in from elsewhere.
The fruit is the tradition’s foundation and it is genuinely distinct. Basque cultivars such as Errezila, Goikoetxea, Txalaka and Moko carry high acidity with moderate phenolics, and the local classification recognises categories that map onto neither the English four-way scheme nor the French five. The blend that results ferments to a cider whose defining sensation is acid — sharper than Asturian cider, sharper again than anything in England or France — and whose structure depends on that acid rather than on tannin or sugar.
Production is spare. The fruit is pressed, the juice ferments spontaneously in large chestnut or oak kupelak or in stainless, and a malolactic conversion follows that softens the malic edge and adds lactic character. Nothing is added, nothing is filtered, and the cider goes into bottle or stays in barrel still. Reduction, oxidation, volatile acidity and phenolic notes are all part of what emerges, and the Basque palate accommodates a level of each that would be judged severely elsewhere.
The sagardotegi season is the tradition’s public form. From roughly midwinter to spring, cider houses open their barrels and drinkers move between them, taking cider directly from the tap in a stream caught in the glass, drinking a little at a time, and eating a fixed menu of cod omelette, salt cod with peppers, grilled beef, and sheep’s cheese with walnuts and quince. Every part of that is load-bearing: the acid of the cider cuts the fat of the beef, the small measures keep the cider aerated and fresh, and the movement between barrels is how a drinker learns that no two are the same.
The Basque tradition extends across the French border into Iparralde, where cider is made in the same manner under a different state and outside this designation. The cider culture does not stop at the frontier even where the legal instruments do.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Acid, and a volatile lift comparable to the Asturian tradition but on Basque fruit and a Basque cultivar list.
- Whether it was drunk from the kupela in the sagardotegi season, which is how the tradition presents it.
- The txotx pour, which does what escanciado does by a different route: a thin stream from the barrel into a glass held low, aerating the cider and raising a brief head that collapses within seconds. What both practices are really doing is releasing the volatile lift and softening the acid for the moment the cider is drunk, which is why the glass is filled shallow and drunk at once.
What gets misread
- Treating it as Asturian cider under another name. The designation, the cultivars and the service ritual are its own, and the region crosses a national frontier.
- Applying a tannin expectation. There is very little, and what carries the drink instead is acid and a volatile aromatic lift that a West Country palate would read as a fault. Whether that lift is character or defect is a question of degree and of tradition, and this is a tradition that has decided it.

Fruit sorting
Taking rotten, mouldy and damaged fruit and foreign material out of the crop before it reaches the mill, which is the primary control on patulin in cider.
Milling
Reducing whole fruit to a pulp so that the press has cell walls it can drain, rather than intact apples it can only bruise.
Hydraulic pressing
Pressing in which a pump drives fluid against a ram, so that a small pumped pressure becomes a large, controllable and repeatable load on the pomace.
Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Malolactic fermentation
A bacterial conversion of sharp malic acid into softer lactic acid, which lowers acidity, changes aroma, and in most traditional cider happens whether it was planned or not.
Fermentation vessels
The container a cider ferments in — wood, stainless, plastic, glass or concrete — and how its permeability, thermal mass and resident microflora shape the result.
Racking
Moving cider off the sediment it has thrown, which both cleans the liquid and — by taking yeast and nitrogen away with the deposit — slows what is left of the ferment.

Interactions rather than suggestions. Each explains the mechanism, so you can extend it to a dish that is not listed.
- Idiazábal — Both come from the same Basque valleys. The cider’s very high acidity clears the ewe’s-milk fat, and where the cheese is smoked its guaiacol-family phenols run alongside the cider’s own phenolic and oxidative character rather than against it.
- Ossau-Iraty — Basque cider and Basque ewe’s-milk cheese come from the same valleys on either side of the border; the cider’s severe acidity is well matched to a cheese whose fat content is among the highest here, and the pressed paste holds enough casein to absorb its modest tannin.
- Salt cod — Salt cod is a fixed part of the Basque cider-house menu, served alongside the cider poured from the barrel; the fish is usually cooked with a great deal of olive oil, and the cider’s severe acidity is what makes that quantity of emulsified oil tolerable across a plateful.
- Txuleta — The txuleta and the cider barrel are two halves of the same Basque cider-house meal. The mechanism supports the custom: aged beef carries a great deal of fat with a pronounced mineral savour, and Basque cider’s severe acidity is what makes a large chop workable across a whole meal.

Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Ethyl acetate taint
A solvent, nail-varnish or pear-drop aroma from ethyl acetate, the most abundant ester in cider and the one that turns from lift to fault over a narrow range.
Reduction
A closed, stale, slightly sulphurous character in cider held under strongly oxygen-free conditions, sometimes clearing with air and sometimes not.
Brettanomyces character
Farmyard, horse-blanket, smoky and sticking-plaster aromas from *Brettanomyces* yeast converting hydroxycinnamic acids into volatile phenols.
Excessive acidity
Acidity high enough to dominate everything else, leaving a cider that is thin, hard and sour rather than fresh.

- Can you fix a cider that has gone vinegary — Not really. Volatile acidity cannot be removed at small scale, and blending it away only dilutes it. The realistic options are to accept it, to blend a lightly affected batch into a much larger sound one, or to let it finish becoming vinegar.
