Salt cod is preserved by salting and drying, and even after long soaking it retains a salinity well above that of fresh fish, along with a concentrated savour that soaking does not remove. The classic Basque preparations — pil-pil, a la vizcaína — add a large quantity of olive oil, emulsified into a sauce by the fish’s own gelatine.

That is why Basque cider is a genuinely good answer rather than merely a local one. It is among the most acidic drinks in the cider family, and emulsified olive oil is one of the more persistent fat films a palate can encounter.
