Recorded interactions
Written records, each citing the mechanisms it rests on.
Interaction holds firmly
Sidra natural
Chorizo cooked in cider is standard Asturian practice, and drinking the same cider alongside works for the same reason: severe acidity against a very high paprika-laden fat load, with the carbonic prickle of the pour adding to it.
Mechanisms: Acid cuts fat · Regional tradition · Carbonation lifts heavy texture
Interaction holds
Galician cider
The same mechanism from the neighbouring region, generally with a cleaner and slightly less volatile profile.
Mechanisms: Acid cuts fat · Regional tradition
Interaction holds
Medium cider
Where the chorizo is picante, residual sugar starts to matter: capsaicin burn falls measurably with sweetness, and the salt is suppressed at the same time.
Mechanisms: Sweetness tames chilli heat · Sweetness balances salt
Strength is reliability, not rating. What each mechanism claims, and how far.
Combinations that work badly
Published as prominently as the cases that work.
- West Country farmhouse cider — For a hot chorizo, firm tannin and capsaicin both act on the trigeminal system and sum rather than cancel; the burn rises and the astringency reads as harsher.
Tradition
Recorded as history. That a combination is customary in a place is evidence about agriculture and trade — what was made and kept within reach of what — and not evidence that it is sensorially optimal.
Documented custom
Chorizo a la sidra — chorizo simmered in cider — is standard practice in Asturian cider houses, where the cooking liquid and the drink are the same product.
More on Chorizo
Chorizo is defined by pimentón, which brings both colour and a smoky-sweet paprika aroma, and by a high fat content that carries those fat-soluble compounds through the mouth. Dried versions are firm and concentrated; cooking versions release a great deal of rendered orange fat.
Heat is the variable that decides the drink. A dulce chorizo is a fat and salt subject where acid does the work and tannin is tolerated. A picante one adds capsaicin, and the tannin ceiling falls immediately: the same cider that suited the mild version makes the hot one read as harsher.

Mechanisms that fired
- Carbonation scrubs fat — Carbonation lifts fat from the palate mechanically, independently of acid.
- Sweetness balances salt — Sweetness and salt each moderate the other.
- Tannin binds protein — Tannin binds proteins in the food rather than in saliva, so the astringency reads as softer.
- Matching intensity — Neither one overwhelms the other in weight.

Chorizo is also a subject of FoodHQ, a sister HEKNO product: Pimentón, curing and the difference between cooking and dried chorizo.
The styles involved
What each of these is, defined independently of anything it is served with.
Sidra natural
The still, dry, unfiltered cider of Asturias and the Basque Country, wild-fermented from local high-acid fruit and poured from a height to raise a momentary sparkle.
Galician cider
Cider from Galicia and the north-western Iberian fringe, made in a smaller and less codified tradition than its Asturian and Basque neighbours, from a distinct local fruit population.
Medium cider
Cider carrying enough residual or added sugar to be perceptible without dominating, the commonest sweetness level in British retail.
What people ask next
Questions readers ask about the things this page mentions. Each one goes to the section that answers it rather than to a page written to receive the question.
- What is sidra natural — Sidra natural is the still, dry, unfiltered cider of Asturias and the Basque Country, bottled without added carbonation and poured from a height to rouse it. It is tart, funky and made to be drunk in small measures poured one at a time.
- What is a medium dry cider
- What is a traditional west country cider blend — Predominantly bittersweet fruit for body and tannin, with a proportion of sharp fruit for acidity and sometimes a smaller share of bittersharps for both. The exact composition varied by farm and by what was in the orchard.

Peer-reviewed literature on apple phenolics and cider sensory perception
Various journals · peer-reviewed literature · registered as competent for this subject
Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. Individual papers are cited where a specific number is quoted.
Denominación de Origen Protegida Sidra de Asturias
Consejo Regulador de la DOP Sidra de Asturias · designation authority · passage verified 2026-08-24
The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
BJCP Beer Style Guidelines — cider and perry categories
Beer Judge Certification Program · classification framework · retrieved 2026-08-24
Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
