Armagh Bramley apples hold a protected geographical indication as fruit, but that protects the apple rather than any cider made from it. Irish cider itself has no protected name, and the category is defined by market practice rather than by specification.

About Irish cider
Irish cider is unusual among European cider countries in that its identity was formed largely by a single mass-market presentation rather than by a farmhouse tradition. The dominant national style is pale, filtered, carbonated, medium-sweet and served very cold — a format designed for a pub trade in which cider competes with lager, and one that has been exported successfully enough to shape what much of the world assumes cider to be.
Behind it sits a real orchard region. The county of Armagh has grown apples for centuries and its Bramley crop is significant enough to hold protected status as fruit. Bramley is a culinary apple of extremely high acidity, and a cider made from it alone is a sharp, thin, aromatic drink that needs sweetening or blending to be balanced. Much Armagh fruit goes to processing rather than to cider, and much industrial Irish cider is made from concentrate that may not be Irish at all.
A separate and smaller sector, concentrated in the south, makes cider from planted cider cultivars — including English bittersweets — and presents it as a full-juice agricultural product. Its output looks and tastes much more like West Country or modern craft cider than like the national mainstream, and it operates in a different market. Describing Irish cider without distinguishing the two would misrepresent both.
Historically the island had scattered orchard and cider traditions, particularly in the south-east, and the agricultural research literature records orchard practice going back well before the modern industry. What it did not have, unlike Somerset or Asturias, was a continuous smallholder cider culture that survived into the twentieth century at scale. The modern picture — a very large commercial category and a small full-juice one, with limited middle ground — follows from that.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- The gap between the large industry and the small producers, which is unusually wide here.
- Fruit base, which for the small makers is often bittersweet and for the large ones is not.
- Whether it is made from Irish fruit at all. Concentrate travels and orchards do not, so a cider made in Ireland and a cider made from Irish apples are two different claims and only one of them is about the fruit.
What gets misread
- Taking the dominant commercial product as the tradition. Ireland has a long orchard history and a small revival that reads nothing like it.
- Reading Irish cider as English cider made elsewhere. The orchard history is its own — Armagh has grown apples on a commercial scale for centuries — and the small full-juice makers are working from a different cultivar base and a wetter, cooler season than the West Country.
Cold. The commercial mainstream of this category is built to be drunk cold and carbonated, and assessing it at cellar temperature is judging it outside the conditions it was designed for.

- Modern mainstream cider — Most of the volume from Ireland belongs to that category rather than to a distinct Irish tradition.

Starting a ferment by pitching a chosen yeast culture so that one known strain, rather than the fruit’s resident population, does the work.
Fermentation temperature control
Managing the temperature at which a ferment runs, which sets not only how fast it goes but which aromatics survive it and what the finished cider tastes of.
Back-sweetening
Adding sugar, juice or concentrate to a cider that has fermented dry — a straightforward adjustment that leaves the drink microbiologically unstable until something is done about it.
Filtration
Passing cider through a porous medium to reach a stated visual brightness, at a real cost in colloidal material, body and aroma.
Forced carbonation
Dissolving carbon dioxide into cider under pressure to a chosen level, giving complete control of the sparkle and none of the flavour a second fermentation would contribute.
Kegging
Filling cider into a sealed keg for gas dispense or into a vented cask for gravity and handpump service — two formats whose difference is not the container but whether the cider ever meets air.

A cider with no weight or texture in the mouth, most often from over-watered pomace, low-gravity juice or a blend with nothing to give it substance.
Excessive acidity
Acidity high enough to dominate everything else, leaving a cider that is thin, hard and sour rather than fresh.
Sorbate off-flavour
A faint plastic, candle-wax or celery-like note from sorbic acid used as a preservative, distinct from the geranium taint that bacteria produce from it.
