Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Armagh’s orchard country occupies the drumlin belt south of Lough Neagh, and both features matter. The lough is large enough to moderate temperature through the winter and to reduce the severity of spring frost on the ground immediately around it, while the drumlins — low rounded glacial hills — provide the slope and drainage that the surrounding flat, wet ground lacks. The climate is mild and oceanic with rainfall spread through the year, and accumulated summer heat is modest, so ripening is slow and fruit retains high acidity. That suits a culinary apple, which is judged on acid, size and cooking texture rather than on sugar or aromatic development, and it explains why the county’s fruit economy settled on cooking fruit rather than on dessert or cider varieties. Humidity keeps scab and canker pressure high, and orchard management here is correspondingly intensive.
Soils
Well-drained glacial till on the drumlin slopes gives the county its orchard ground; the heavy, poorly drained soils of the intervening hollows and the lough shore are unsuitable for fruit and are left to grass and wetland.

History
How cider making here came to take the shape it has.
- Apple growing around Lough Neagh is long established and the county’s orchard identity predates its modern crop, but the shape of the present industry dates from the nineteenth and twentieth centuries.

About Armagh
Armagh is the sharpest available illustration that an orchard county need not be a cider county. It grows more apples than anywhere else on the island of Ireland, has done so for a long time, and has built its whole horticultural economy around fruit that goes to a peeling line rather than a press.
The specialisation is close to total. The county’s crop is overwhelmingly a single culinary variety, grown in intensively managed bush orchards on the drumlin slopes south of Lough Neagh, graded and held in controlled-atmosphere storage for a processing market. Protected geographical indication status for Armagh Bramley Apples formalised a concentration that the trade had already produced.
The climate explains why that variety and not another. Modest summer heat and slow ripening under an oceanic sky leave fruit high in acid and moderate in sugar, which is exactly what a cooking apple is judged on and exactly what a cider maker has to work around. Cider made from this fruit alone is sharp, pale and thin-bodied, and the small number of producers working with it say so.

- Can you make cider from shop bought apple juice — Yes, provided the juice contains no preservative — check for potassium sorbate or benzoate on the label. Pasteurised juice ferments perfectly well once yeast is added, because pasteurisation removes the organisms but not the sugar.

The Traditional Welsh Perry specification was re-read on 2026-08-25 for the comparison with Austrian fruit-wine law, and its prohibition list transcribed in full: the two instruments turn out to regulate opposite things, one composition and one technique.
