Published by the Consejo Regulador of DOP Sidra de Asturias as “Ácido”, on total acidity 2,7 g/L as sulphuric acid and total polyphenols 0,8 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

Held deliberately loose. The designation publishes 2,7 g/L of acidity and 0,8 g/L of polyphenols but classifies the fruit as acid, and the two do not agree; the bands follow the figures and the confidence follows the disagreement.

About Xuanina
Xuanina is one of the varieties admitted to DOP Sidra de Asturias, and its record here is shorter and more hedged than most because two accounts of the fruit contradict each other and the contradiction has not been resolved.
The Consejo Regulador records late flowering, ripening in the second ten days of November, moderate to low susceptibility to fungal disease, and a good level of cropping on a moderate to vigorous tree. It files the fruit in the ácido block. Descriptive accounts in circulation say something quite different — an early flowerer, ripe in September, a season-opener that will not store. Both cannot be true of the same apple, and CiderHQ follows the Consejo, because a designation’s own characterisation of a variety it admits outranks an undated description of unclear provenance.
One thing about the Consejo’s row deserves stating rather than smoothing over. Its figures for Xuanina — 2,7 g/L of total acidity as sulphuric acid, 0,8 g/L of polyphenols — are identical to its figures for Verdialona, and Verdialona is filed in the dulce block. Two different apples characterised to two decimal places rarely land on exactly the same pair of numbers, and when they do and are then classified differently, something in one of the two rows is astray. It could be a duplicated figure, or a block assigned on evidence the published table does not show. CiderHQ publishes both rows as the Consejo does, records the anomaly on both pages, and does not guess which one is wrong.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
