Published by the Consejo Regulador of DOP Sidra de Asturias as “Ácido”, on total acidity 4,8 g/L as sulphuric acid and total polyphenols 1,1 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

There is no established single-varietal tradition, and the analysis offers no particular reason to start one.
About Prieta
Prieta means dark, and the skin is the first thing anyone notices about the fruit. It colours the must noticeably, which is a visual rather than a sensory contribution: anthocyanins carry very little flavour, and a dark press does not make a structured cider.
The dark skin invites the assumption that the fruit is unusually phenolic, and Prieta is often listed among the region’s bittersharps on that basis. The Consejo Regulador’s characterisation does not support it: 4,8 g/L of acidity and 1,1 g/L of polyphenols place the fruit squarely in the ácido block, with a phenolic load near the middle of the Asturian range and far below Meana or Amariega.
The tree is moderate to low in vigour, crops moderately, and carries a susceptibility to fungal disease recorded as ranging from high to low — an unusually wide characterisation, and one that suggests the behaviour varies with site more than with the cultivar.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.

Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
