Published by the Consejo Regulador of DOP Sidra de Asturias as “Muy ácido”, on total acidity 6,2 g/L as sulphuric acid and total polyphenols 1,2 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

Severely acid — among the sharpest fruit in the Asturian register — with modest phenolics behind it. Nobody eats this apple.
Aroma
No aroma descriptors are recorded for Fuentes, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Not suited to a single-varietal cider
Fermented alone the acid would be punishing and the result structurally one-dimensional. Its use is to sharpen a blend, and it does that at low inclusion.
About Fuentes
Fuentes is one of the most acid cultivars on the Asturian permitted list, at 6,2 g/L of total acidity expressed as sulphuric acid — which is roughly 8,5 g/L in the malic-acid convention English and North American analyses use. The Consejo Regulador files it under muy ácido, its own emphatic form of the acid block.
The tree is very vigorous and crops well, and it is the one cultivar in this group with a noted weakness: susceptibility to fungal disease is recorded as high to moderate, where most of the Asturian register sits at low or very low. In a climate as wet as the Bay of Biscay coast that is not a small qualification, and it is the kind of trade-off that decides what actually gets planted.
The gap between this fruit and the sweet block is worth stating plainly, because the two are easily confused by anyone working from variety lists rather than analyses. A dulce Asturian apple runs to about 1,2 to 2,7 g/L of acid. Fuentes runs to 6,2. They are not neighbouring categories with a fuzzy border; they are opposite ends of the distribution, and a blend built on the wrong assumption about which one a cultivar belongs to will not be rescuable in the cellar.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.

Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
