Published by the Consejo Regulador of DOP Sidra de Asturias as “Dulce”, on total acidity 2,7 g/L as sulphuric acid and total polyphenols 0,8 g/L as tannic acid. Asturian practice reports acidity as sulphuric acid, so the figure is not directly comparable with an English or North American malic-acid one.

Aroma

No aroma descriptors are recorded for Verdialona, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Too low in both acid and phenolics to stand alone, and the resulting pH would be a microbiological problem before it was a flavour one.

About Verdialona

Verdialona ripens in the second and third ten-day periods of November, at the tail of the Asturian harvest, and is named for the green skin it keeps even when ready. The name misleads: the fruit is not sharp. The Consejo Regulador records 2,7 g/L of total acidity as sulphuric acid and places it in the dulce block, which in an orchard population running to 7 g/L makes it distinctly mild.

That is the role it plays. Asturian blends are dominated by acid fruit, and the sweet block exists to give them enough sugar and enough pH not to finish thin. There is no chaptalisation and no back-sweetening inside the designation, so a llagar short of sweet fruit has no remedy for it in the cellar.

One caution belongs on this record. The Consejo publishes identical figures — 2,7 g/L acid, 0,8 g/L phenols — for Xuanina, and files that variety under ácido. Two identical characterisations cannot support two different blocks, so either a figure or a block is astray in one of the two entries. CiderHQ publishes both as the Consejo does and flags the contradiction rather than choosing a winner.
