About Sidra de nueva expresión
This category is unusual in being consciously designed. Asturian producers and the region’s agricultural research service developed it to address a specific commercial problem: sidra natural is closely tied to its place and difficult to sell outside it, because it is cloudy, volatile, still, requires a particular pour, and does not survive comparison with clean modern drinks on the terms most markets apply.
The response was to keep the fruit and change everything else. The juice is clarified and protected with sulphur dioxide, a selected yeast is pitched, fermentation runs cool and under control, malolactic conversion is managed rather than assumed, and the cider is cold-stabilised and filtered before bottling under cork. The result is bright, aromatic, fully dry and free of the volatile and oxidative markers that define the traditional style.
What survives the transformation is the acid. Asturian fruit is high in malic acid and that does not change with handling, so the new-expression ciders are taut and linear in a way that recalls a dry Atlantic white wine more than any English or French cider. Aromatically they show green apple, citrus peel and floral notes that the traditional method buries under ferment character.
The category raises a question the tradition has not resolved. If the volatile and oxidative character of sidra natural is the point of it, then a cider made to eliminate that character is a different product using the same fruit — which is what the designation, by admitting it as a separate category, effectively concedes. Producers hold both positions, and some make both. A reference work’s job here is to describe the disagreement rather than to settle it.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- Clean fermentation without the volatile lift the natural style carries. That is the defining difference.
- Fruit character preserved rather than transformed, which is what the controlled ferment is for.
- Whether it still reads as Asturian. The fruit is the same and the handling is not, so the question worth asking is what survives the change — the cultivars are high-acid and low-tannin whatever is done to them, and that shape is usually still legible under the cleaner ferment.
What gets misread
- Reading it as a departure from tradition rather than as a second tradition. It is made in the same region by the same producers.
- Expecting escanciado. This style is poured normally and would gain nothing from the long pour: the aeration exists to lift a volatile character that a controlled ferment did not produce.
Cold, around 8 °C, and in a wine glass rather than a sidra glass. This category was made deliberately clean and stable and does not want the long pour the traditional style requires.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.
