Recorded interactions
Written records, each citing the mechanisms it rests on.
Interaction holds firmly
Sidra natural
Ewe’s milk carries very high fat, and sidra natural’s combination of high malic and lactic acidity with the transient carbonic prickle raised by pouring from height clears it more effectively than acidity alone.
Mechanisms: Acid cuts fat · Carbonation lifts heavy texture · Regional tradition
Interaction holds
Galician cider
Sharp, lightly tannic Galician cider meets a firm cheese at a comparable volume without the volatile-acid intensity of an Asturian pour.
Mechanisms: Acid cuts fat · Matching intensity
Interaction holds
Dry cider
A pressed cheese retains a good deal of intact casein, so moderate tannin is absorbed and the acid does the rest.
Mechanisms: Acid cuts fat · Tannin binds protein
Strength is reliability, not rating. What each mechanism claims, and how far.
Combinations that work badly
Published as prominently as the cases that work.
- Sweet cider — The cheese has salt but not the pungency that makes sugar useful; sweetness here leaves the fat uncleared and adds a confected note to a subject whose interest is savoury.
More on Manchego
Manchego’s pairing character comes from ewe’s milk. Sheep’s milk is roughly twice as fatty as cow’s and carries a distinct fatty-acid profile, which produces both the buttery density and the faint lanolin note that people either notice immediately or not at all. Fat is the dominant problem, salt a secondary one.
Age matters, as with any pressed cheese. A three-month semicurado is mild and supple; a twelve-month curado is harder, saltier, more crystalline and considerably more intense, which moves it from an acid-and-fat subject to an intensity one.
Derived by CiderHQ from the documented mechanisms
Produced by rule from the properties above, not written by anyone, and shown with the mechanisms that fired.
Structured inference, not a written judgement — nobody has assessed these combinations. How authored records and derived matches differ.
Derived
Irish cider
Mechanisms that fired
- Acid cuts fat — The dish is rich and this style is high in acid, which clears the palate between mouthfuls.
- Carbonation scrubs fat — Carbonation lifts fat from the palate mechanically, independently of acid.
- Sweetness balances salt — Sweetness and salt each moderate the other.
- Matching intensity — Neither one overwhelms the other in weight.

- Tannin binds protein — Tannin binds proteins in the food rather than in saliva, so the astringency reads as softer.

Manchego is also a subject of FoodHQ, a sister HEKNO product: Manchego’s protected designation, the Manchega breed, and the meaning of its ageing grades.
The styles involved
What each of these is, defined independently of anything it is served with.
Sidra natural
The still, dry, unfiltered cider of Asturias and the Basque Country, wild-fermented from local high-acid fruit and poured from a height to raise a momentary sparkle.
Galician cider
Cider from Galicia and the north-western Iberian fringe, made in a smaller and less codified tradition than its Asturian and Basque neighbours, from a distinct local fruit population.
Dry cider
Cider fermented out or finished so that little fermentable sugar remains, leaving acid, tannin and alcohol to carry the palate.
What people ask next
Questions readers ask about the things this page mentions. Each one goes to the section that answers it rather than to a page written to receive the question.
- What is sidra natural — Sidra natural is the still, dry, unfiltered cider of Asturias and the Basque Country, bottled without added carbonation and poured from a height to rouse it. It is tart, funky and made to be drunk in small measures poured one at a time.
- Why does my dry cider still taste sweet — Alcohol, glycerol and ripe fruit aroma all read as sweetness even when no sugar remains. High alcohol in particular is perceived as sweet before it is perceived as strong.
- What is sweet cider in america — In the United States and Canada, sweet cider means fresh, unfermented, usually unfiltered apple juice, with no alcohol in it. In Britain the same phrase means a fermented cider with residual sugar.
- Is cider made in galicia

Peer-reviewed literature on apple phenolics and cider sensory perception
Various journals · peer-reviewed literature · registered as competent for this subject
Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. Individual papers are cited where a specific number is quoted.
BJCP Beer Style Guidelines — cider and perry categories
Beer Judge Certification Program · classification framework · retrieved 2026-08-24
Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
Denominación de Origen Protegida Sidra de Asturias
Consejo Regulador de la DOP Sidra de Asturias · designation authority · passage verified 2026-08-24
The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.

The Science of Cidermaking and associated technical writing
Andrew Lea · reference work · passage verified 2026-08-24
Written by a food chemist who worked at Long Ashton on apple phenolics. Unusual among specialist cider writing in that it is primary-research-adjacent: the author is describing work he did, and cites the literature. This is why it is registered at tier 1 for chemistry while a general cider book is not.
