- A schematic strip of the north Spanish coast along the Bay of Biscay, running from Galicia in the west through Asturias and Cantabria to the Basque Country in the east. Three shaded zones mark the cider areas; the interior below is labelled as having no cider tradition.
- Why the band is so narrow
- Apples need the cool, wet Atlantic climate of the northern coast. The Meseta behind it is hot, dry and continental, and it is wine country rather than cider country. The line between the two is a climate boundary, not a cultural one.

Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Cantabria occupies the same narrow platform between the Cantabrian Sea and a high mountain wall as Asturias, and shares its climate almost exactly: high rainfall through the year, high humidity, mild winters with little coastal frost, and cool cloudy summers. Heat accumulation is limited, so fruit ripens slowly and comes in with moderate sugar and good acid, and the resulting cider is naturally dry, sharp and low in alcohol. The eastern valleys near the Basque border are marginally wetter and more sheltered, and they hold most of the region’s orchards. The mountains behind rise steeply enough that the orchard country is confined to a strip: above a few hundred metres the season shortens quickly and the fruit will not ripen reliably. Fungal disease pressure is high and constant, and drying gathered fruit before milling is a real autumn constraint.
Soils
Moist, moderately acid soils over sandstone and limestone on the coastal platform and lower valleys, holding a permanent sward beneath the trees and contributing to low juice nitrogen.

How the fruit is actually grown here — tree form, planting, what else the ground is used for, and who owns it.

History
How cider making here came to take the shape it has.
- Cider making in Cantabria is documented alongside that of its neighbours and belongs to the same Atlantic tradition; the region has never been outside the cider country geographically or culturally.
- Its scale was always smaller than Asturias’s, and the region’s agricultural identity in the modern period was built on dairying rather than on fruit.
- The twentieth century reduced the tradition to household making in the eastern valleys.
- A small commercial sector has re-emerged since the 1990s, generally making cider in the Asturian manner and marketing it regionally.
- Cantabria has no protected designation for cider comparable to the Asturian or Basque instruments, and its producers work under general Spanish and EU rules.

About Cantabria
Cantabria is a cider region by climate and a minor one by history. It shares Asturias’s coastal platform, its rainfall, its mild winters and its slow cloudy ripening, and the cider that results from fermenting its fruit is the same kind of drink: dry, sharp, unfiltered, low in alcohol, through malolactic conversion. What it never had was scale.
The reason is largely agricultural. Cantabria’s modern rural economy was built on dairying, and its steep, high and wet terrain leaves only a narrow band where fruit will crop well. Orchards concentrated in the eastern valleys towards the Basque border, and even there the parcels are small and attached to livestock holdings.
Because the region sits between two much larger and more codified cider cultures, its practice borrows from both. Producers work with Asturian varieties and the Asturian classification, pour in the Asturian manner, and sit close enough to the Basque provinces to share elements of their cider-house habit. There is no protected designation and no separate Cantabrian method to describe.
A short record is the correct one here. Cantabria matters as evidence that the Atlantic cider belt of northern Spain is continuous rather than a set of separate islands — the same climate, the same fruit and the same drink run from Galicia to the French border, with the institutional weight concentrated at two points along it.

Taking rotten, mouldy and damaged fruit and foreign material out of the crop before it reaches the mill, which is the primary control on patulin in cider.
