How strong is cider?
In short
Most cider is between about 3% and 8.5% alcohol by volume. Mainstream British and international products cluster around 4% to 5.5%; traditional West Country cider and Spanish sidra natural commonly sit between about 5.5% and 8%; French cidre is often lower, and cidre doux can be under 3%.
The ceiling is not a natural one. Apple juice rarely carries enough sugar to ferment past roughly 8.5%, which is why several tax systems draw their line at exactly that figure.
Above it are products made by concentrating the sugar or adding to it: ice cider, apple wine and fortified products such as pommeau reach the strength of wine or beyond.
Typical strengths by tradition
The ranges below are typical rather than definitive, and every one of them has exceptions. They are given as ranges because a single figure would be false.

Why 8.5% keeps appearing
Apple juice typically ferments to somewhere between 4% and 8% alcohol depending on how much sugar the fruit carried, and reaching much beyond that requires the sugar to be increased. Legal systems have noticed this. The United Kingdom charges a product as cider only up to 8.5% ABV, above which it is taxed as another fermented product; the American hard cider tax rate applies below 8.5% ABV as well.
The consequence is that 8.5% functions as a practical boundary of the category in two large markets, and producers who want to exceed it accept a different tax treatment and often a different name on the label. It is a regulatory line drawn where the fruit already suggested one.
Strength and what it does to the drink
Alcohol is not only intoxicating; it is a flavour component. Ethanol tastes faintly sweet, contributes warmth at the back of the palate and adds body. A cider at 8% will feel weightier in the mouth than the same cider diluted to 4%, quite apart from any difference in sugar.
It also acts as a solvent and a preservative. Higher alcohol holds more aroma compounds in solution, slows most spoilage organisms, and is part of why stronger traditional ciders keep better than weak ones.
This is why very low-strength cider is technically difficult rather than merely weak. Removing the alcohol or preventing it forming takes away sweetness, body and aroma-carrying capacity at once, and the resulting drink has to be rebuilt rather than simply diluted.

The UK alcohol duty system was reformed in August 2023 onto a strength-based footing, with draught relief and small producer relief alongside it. The rate table was read on 2026-08-24 and carries an effective date of 1 February 2026. CiderHQ records the band *structure* — which is stable and explains why producers make the strengths they do — and states rates only with that effective date attached, because a rate with no date on it becomes permanent and wrong.

The definition CiderHQ’s units calculator implements, read against the page rather than assumed: one UK unit is 10 ml or 8 g of pure ethanol, and units are ABV multiplied by volume in millilitres divided by a thousand — which is exactly the arithmetic in `engine/calculators.ts`.

The address CiderHQ had registered — ttb.gov/wine/hard-cider — now returns 404; the bureau publishes its cider material at ttb.gov/cider/cider-resources, and the record has been corrected. The substantive hard cider definition is in 27 CFR §§24.10 and 24.331, which CiderHQ cites directly and has verified to the passage; this page is the regulator’s own gateway and its industry circular pointer, not the operative text.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.

The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
