Why cider strength varies so much
Why is one cider 4% and another 8%?
In short
Two things set the strength: how much sugar the juice contained, and how much of that sugar the yeast was allowed to convert. Everything else is a way of changing one of those two.
Sugar in the juice varies with apple variety, season, orchard management, how ripe the fruit was and whether it was left to sweat before pressing. Sugar left unfermented varies with whether the maker wanted a sweet cider, and by which method they achieved it.
On top of that sit deliberate adjustments — adding sugar, adding water, concentrating by freezing, or blending in a low-alcohol batch — and, in several countries, the pull of a tax band that makes certain strengths cheaper to sell.
The sugar the fruit brought
Potential alcohol is set at the press. Juice with more dissolved sugar has a higher specific gravity and can ferment to a higher alcohol; there is a fixed arithmetic relationship between the two that every cidermaker uses, though the exact conversion factor differs slightly between authorities.
How much sugar the juice carries depends first on variety. Some cider varieties reliably give dense, sweet juice and are valued for it; others give thinner juice and are grown for acid or tannin instead. It depends second on the season: a warm, dry summer concentrates sugar, a wet one dilutes it, and the same orchard can differ by a substantial margin between two consecutive years.
It depends third on what happened between the tree and the mill. Fruit left to sweat in a heap loses water and converts remaining starch to sugar, so the juice presses out denser. Fruit milled straight from the tree, still hard, gives thinner juice. This is a deliberate choice with a predictable effect.
How far the ferment was taken
A cider fermented to completion converts essentially all its sugar and lands at its potential alcohol. A cider stopped short lands lower, and keeps the difference as residual sugar. Every sweet cider that has not been sweetened afterwards is therefore weaker than the same juice fermented dry.
Fermentation can be halted deliberately in several ways. Keeving starves it of nutrients so it stops of its own accord. Chilling, repeated racking and filtration remove or immobilise the yeast. Sulphiting and sorbate suppress it. Pasteurisation kills it. Each leaves a different drink behind, but all of them lower the final alcohol relative to a complete ferment.
The alternative route is to ferment dry and add sweetness back afterwards, which decouples strength from sweetness entirely. A back-sweetened cider can be both strong and sweet, which no arrested ferment can manage from the same juice.
What is added, removed or blended
- Added sugar raises the potential alcohol before fermentation. It is permitted in some jurisdictions and restricted in others, and forbidden under several protected designations.
- Added water lowers the strength and is what makes a 35%-juice product possible at drinking strength. Where the water is added before fermentation, sugar is usually added with it.
- Freeze concentration removes water from the juice and raises the sugar sharply, which is how ice cider reaches wine strength from apples.
- Blending sets the final figure. A strong vat and a weak one combined land somewhere in between, and this is the ordinary way a commercial producer hits a target strength precisely.
- Duty bands exert a quiet pull. Where a tax structure steps at a particular strength, products cluster just underneath it.
Why the label figure is exact and the drink is not
A label carries a single number because regulation requires one, within a stated tolerance. The cider behind it is the product of a natural process with real variation between vats and between years, and a producer hits the declared figure by measuring and blending rather than by the ferment obligingly stopping at a round number.
A small producer bottling a single vat has less room to do that, which is one reason traditional and farmhouse ciders vary more between batches than industrial ones. That variation is a consequence of scale and method rather than of carelessness.
