Acid and firmly phenolic — twenty-fifth of fifty-seven on acidity, twelfth of fifty-six on polyphenols. It crops lightly, which limits how much of a blend it can be.

Aroma

No aroma descriptors are recorded for Sucu, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. Asturian practice is emphatically a blending tradition, and single-varietal sidra remains a modern minority interest. Nothing in the published characterisation rules it out; nothing recommends it either.

About Sucu

Sucu is one of the local varieties DOP Sidra de Asturias admits, and the Consejo Regulador publishes a characterisation for it: acid on 4,72 g/L of total acidity and 1,36 g/L of total polyphenols. Set against a register running from 1,2 to 8,51 g/L of acid, that places it just on the acid side of the middle of the Asturian orchard.

The Consejo records the tree as flowering very late, ripening in the last ten days of November, cropping fairly low. Susceptibility to fungal disease is recorded as moderate to low.
