Soft and faintly bitter rather than gripping, with almost no sourness. The tannin registers as a mild dryness at the back of the palate rather than as a front-of-mouth bitterness.

WSU lists this fruit as bittersweet — the class it carries in England — but the juice measured at Mount Vernon falls in the sweet quadrant of the site’s own thresholds. Neither reading is an error. A class assigned on acid and tannin describes fruit grown somewhere, and this is somewhere else.

Comes down late in October and improves in a heap; picked too early the juice is thin and the tannin greener than the cultivar is capable of.
Among the most strongly alternate-bearing of the standard Norman cultivars, which is why it is planted in quantity — a heavy year on Bedan can carry a mill.

Made alone it gives a soft, low-acid, gently tannic cider that keeps well but tastes slack. Producers who bottle it single-varietal generally keeve it and stop it sweet, which supplies the tension the fruit does not.
About Bedan
Bedan is the fruit that most clearly shows what a French cider maker means by a bittersweet. It is not a Somerset bittersweet with a French name: its tannin is moderate, its acid is close to negligible, and its virtues are as much chemical as sensory. The juice is low in assimilable nitrogen and generous in pectin, which is the exact combination keeving needs — a firm gel that lifts the brown cap, and a nitrogen-starved fermentation that runs out of steam before the sugar does.
That makes it a difficult cultivar to judge outside its own tradition. Fermented dry with a nutrient addition and a cultured yeast, Bedan produces a flat, unstructured cider that would not persuade anyone of its reputation. Keeved, racked off the clear middle layer and left to inch downwards through the winter, the same juice makes the soft, faintly bitter, sweet-finishing cider that the Domfrontais is known for. The cultivar is not really separable from the method.
In the orchard it is vigorous, long-lived and infuriatingly biennial — more so than most of the Norman standards. Growers have historically dealt with this by planting a lot of it and accepting that half the trees are working in any given year, an approach that only makes sense in a high-stem orchard grazed underneath, where the trees cost little to keep. In modern bush plantings the alternation is a real economic problem, and Bedan has lost ground accordingly.
Its use in cider for Calvados Domfrontais matters to how the fruit is understood. Distillation is forgiving of low acid and rewards body and phenolic weight, so a fruit that makes an unremarkable table cider can make a base spirit that distillers value. Some of Bedan’s reputation travels through the still rather than through the bottle.
Names, origin and identity
Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.
