How it is classified

Classified under more than one system. The systems use different thresholds and were built for different fruit, so the answers can legitimately differ — that is a fact about the schemes, not a contradiction.

Long Ashton classification

Bittersweet

Low acid, high tannin. The class that has no real equivalent in dessert fruit and that defines West Country cider.

Basis: Below about 0.45% w/v acid and above about 0.2% w/v tannin.

A full bittersweet at the high-tannin extreme of the class.

French cider apple families

Bitter · Amère

Very high tannin with low acid — more tannic than the bittersweet family and used in smaller proportion.

Basis: Tannin above 3 g/L and acidity below 3 g/L as H₂SO₄.

The French scheme places fruit of this tannin level in the amère family, a distinction the English four-way split cannot express. This is a good example of two systems disagreeing usefully rather than incorrectly.

Aroma

No aroma descriptors are recorded for Vilberie, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

Tasted at this site

Color amber, highly bitter. Very bitter with high astringency. Bitterness harsh; best used in blending. A very stout cider. Bitterness dominated, estery, metallic taste, tea bags, aftertaste of copper penny, woody bark.

November, later than almost any other cider apple grown in England. In a cold autumn it may not be gathered until the leaves are off.

Far too tannic and far too low in acid to be drunk alone. Attempts exist and amount to an experiment rather than a cider.

About Vilberie

Vilberie is the last fruit of the English cider year. It flowers very late, ripens very late, and is often still being gathered in November when the mill has already worked through everything else. That timing is its principal virtue after its tannin: a maker who wants to press into December, or who wants insurance against a late spring frost, plants Vilberie.

The juice is severe. Tannin at the top of the range with almost no acid to balance it gives something hard, drying and slow to come round, and it is used in small proportion or blended immediately. The French classification is more honest about this than the English one: France puts fruit of this character in a separate amère family precisely because lumping it with the ordinary bittersweets misleads about how much of it a blend can take. Under the Long Ashton scheme Vilberie and Michelin share a category, which is analytically defensible and practically absurd.

It is a healthy, vigorous tree that takes scab lightly and crops biennially, which puts it in the ordinary run of cider apples rather than the difficult end. English growers have kept it for over a century for the season and the structure, and it appears in a great many Somerset and Herefordshire orchards without ever being the reason anyone visits one.
