About Calvados Domfrontais
The Domfrontais is pear country, and its Calvados appellation reflects that rather than treating pears as an incidental addition. A minimum proportion of the fruit fermented for distillation must be pears, which means the spirit is in part a perry spirit — an unusual thing to find written into law anywhere.
Column distillation is required, which pulls the appellation in the opposite direction from the Pays d’Auge. Combined with the pear fraction, it tends to give a lighter, more floral and more overtly aromatic spirit than the pot-still style, and one that shows its fruit earlier. Whether that suits a given drinker is a matter of taste and not of rank; the appellation asserts difference, not superiority.
As with the perry appellation that shares the district, the practical effect is to give the old tall-stem pear orchards a second market. That matters because perry alone is a small trade, and trees that take two decades to crop are only planted where there is a reason to expect a return. The appellation does not itself preserve any orchard, and it makes no promise about the quality of any bottling that carries the name.

The Cidre Pays d’Auge cahier des charges was read in full on 2026-08-24, in the version homologated by arrêté of 17 January 2026 and published in the Journal officiel on 21 January. That qualification is not decoration. A revision adopted by the Comité national on 10 September 2025 is currently under the procédure nationale d’opposition, is clearly marked as not prejudging the final text, and specifies carbonation differently from the text in force — as grams of CO2 per litre rather than as a minimum pressure in bar. A summary citing the draft would have put a figure on the page that no producer is held to. CiderHQ records the operative text and says which one it is.
