Recorded interactions
Written records, each citing the mechanisms it rests on.
Interaction holds firmly
Cidre brut
Rabbit braised in cider with mustard and cream is standard across northern France, and the drink and the cooking liquor are then the same thing; the meat’s high protein absorbs the cider’s tannin and its mildness is not overwhelmed.
Mechanisms: Regional tradition · Tannin binds protein · Matching intensity
Interaction holds
Cidre fermier
Farm cider’s greater aromatic complexity gives a lean and rather neutral meat something to stand alongside.
Mechanisms: Regional tradition · Shared aroma compounds bridge
Interaction holds
Dry cider
Where the braise carries cream or bacon, acid becomes useful again; without them, the drink is mainly there to add lift.
Mechanisms: Acid cuts fat · Contrast or complement
Strength is reliability, not rating. What each mechanism claims, and how far.
Combinations that work badly
Published as prominently as the cases that work.
- Barrel-aged cider — A lean, mild, pale meat has nothing to offer against oak, phenolic weight and high alcohol; the bird-like delicacy of rabbit disappears entirely.
Tradition
Recorded as history. That a combination is customary in a place is evidence about agriculture and trade — what was made and kept within reach of what — and not evidence that it is sensorially optimal.
Documented custom
Lapin au cidre is everyday cookery across Normandy and Brittany, and the cider used in the pot is the cider drunk with the dish.
More on Rabbit
Rabbit is the leanest meat in this file. It carries essentially no intramuscular fat, which is why it is almost always cooked with something fatty — bacon, cream, butter — and why the pairing question is usually about the braise rather than the meat.
Cider’s role in French rabbit cookery is a good illustration of a shared-ingredient tradition: the acid tenderises and balances the cream, the fruit aroma lifts a neutral meat, and drinking the same cider continues both effects.
Derived by CiderHQ from the documented mechanisms

Structured inference, not a written judgement — nobody has assessed these combinations. How authored records and derived matches differ.

- Tannin binds protein — Tannin binds proteins in the food rather than in saliva, so the astringency reads as softer.

Rabbit is also a subject of FoodHQ, a sister HEKNO product: Jointing and braising rabbit, and why it needs added fat.
The styles involved
What each of these is, defined independently of anything it is served with.
Cidre brut
The dry tier of the French cider scale, defined since 2025 by a density no greater than 1.016 with an acquired strength of at least 3.5% vol — correspondingly more of the juice’s sugar converted to alcohol.
Cidre fermier
Farm-made French cider, pressed and fermented on the holding that grew the fruit, sold as an agricultural product of that farm rather than as a regional or industrial one.
Dry cider
Cider fermented out or finished so that little fermentable sugar remains, leaving acid, tannin and alcohol to carry the palate.
What people ask next
Questions readers ask about the things this page mentions. Each one goes to the section that answers it rather than to a page written to receive the question.
- What does brut mean on a cider — On a French cidre, *brut* means dry, and in practice it also implies a higher alcohol than *doux* because more of the sugar has fermented. Its French thresholds are not the same as champagne’s.
- Why does my dry cider still taste sweet — Alcohol, glycerol and ripe fruit aroma all read as sweetness even when no sugar remains. High alcohol in particular is perceived as sweet before it is perceived as strong.

Peer-reviewed literature on apple phenolics and cider sensory perception
Various journals · peer-reviewed literature · registered as competent for this subject
Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. Individual papers are cited where a specific number is quoted.

Consejo Regulador de la DOP Sidra de Asturias · designation authority · passage verified 2026-08-24
The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.

The Science of Cidermaking and associated technical writing
Andrew Lea · reference work · passage verified 2026-08-24
Written by a food chemist who worked at Long Ashton on apple phenolics. Unusual among specialist cider writing in that it is primary-research-adjacent: the author is describing work he did, and cites the literature. This is why it is registered at tier 1 for chemistry while a general cider book is not.
BJCP Beer Style Guidelines — cider and perry categories
Beer Judge Certification Program · classification framework · retrieved 2026-08-24
Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
