Livarot is the intensity extreme of the Norman washed-rind family. Repeated washing over a long ripening produces a rind heavily colonised by salt-tolerant surface bacteria, and the resulting sulphur compounds, amines and short-chain acids make it one of the most aromatically forceful cheeses in France.
