Recorded interactions
Written records, each citing the mechanisms it rests on.
Interaction holds firmly
Cidre Pays d’Auge
Duck carries more subcutaneous fat than any other bird here and a dark, iron-tinged meat that takes tannin well; the fuller Norman styles bring both the acid and the structure, and duck with cider is standard practice in the region.
Mechanisms: Acid cuts fat · Tannin binds protein · Regional tradition
Interaction holds firmly
Dry cider
Acid is indispensable against rendered duck fat, and the apple aroma runs alongside the fruit that classically accompanies the bird.
Mechanisms: Acid cuts fat · Shared aroma compounds bridge
Holds only under stated conditions
Pommeau
Where the duck is served with a fruit sauce, the sweetness floor rises and a sweet fortified style holds where a dry cider would read as sour. It adds weight to an already rich dish, so it suits a small portion.
Mechanisms: Contrast or complement · Matching intensity
Strength is reliability, not rating. What each mechanism claims, and how far.
Combinations that work badly
Published as prominently as the cases that work.
- Low-alcohol cider — A light body with little acid or aromatic length has no answer to a very high fat load and a strongly flavoured dark meat.
Tradition
Recorded as history. That a combination is customary in a place is evidence about agriculture and trade — what was made and kept within reach of what — and not evidence that it is sensorially optimal.
Documented custom
Duck cooked with apples, cider or calvados is established Norman practice, and duck with cider is common across the French cider regions.
More on Duck
Duck combines the highest fat of any bird in this file with a dark, myoglobin-rich meat whose flavour is closer to red meat than to chicken. Both properties are useful: the fat needs clearing, and the protein readily takes up tannin, so a cider with real structure is better tolerated here than with any other poultry.
The classic accompaniments — orange, cherry, apple — are all acidic and sweet, and they change the balance. A fruit-sauced duck raises the sweetness floor enough that a bone-dry cider can read as sour, while a plainly roasted one does not.
Derived by CiderHQ from the documented mechanisms
Produced by rule from the properties above, not written by anyone, and shown with the mechanisms that fired.
Structured inference, not a written judgement — nobody has assessed these combinations. How authored records and derived matches differ.
Derived
American heritage cider
Mechanisms that fired
- Acid cuts fat — The dish is rich and this style is high in acid, which clears the palate between mouthfuls.
- Tannin binds protein — Tannin binds proteins in the food rather than in saliva, so the astringency reads as softer.
- Matching intensity — Neither one overwhelms the other in weight.

Derived
Bottle-conditioned cider
Mechanisms that fired
- Carbonation scrubs fat — Carbonation lifts fat from the palate mechanically, independently of acid.

Elsewhere in the portfolio
Duck is also a subject of FoodHQ, a sister HEKNO product: Rendering duck fat, scoring the skin, and cooking breast and leg differently.
The styles involved
What each of these is, defined independently of anything it is served with.
Cidre Pays d’Auge
The controlled appellation cider of the Pays d’Auge in Calvados, made by keeving from bitter Norman fruit and bottle-conditioned to a low alcohol and a high residual sugar.
Dry cider
Cider fermented out or finished so that little fermentable sugar remains, leaving acid, tannin and alcohol to carry the palate.
Pommeau
A blend of fresh apple juice and apple brandy, mixed before fermentation so that the spirit prevents it, then aged in oak.
What people ask next
Questions readers ask about the things this page mentions. Each one goes to the section that answers it rather than to a page written to receive the question.
- What does the pays d auge aoc actually require — Pure cider apple juice from a closed variety list, a blend at least 70% phenolic varieties and at most 25% acidulée, compulsory maceration and pectic settling, capped orchard yields, and a sparkle that may only come from fermentation finishing in the bottle over at least six weeks. Pasteurisation, added water, added sugar and gasification are all prohibited.
- What is pommeau — Pommeau is a French aperitif made by blending unfermented apple juice with apple brandy, so that the spirit stops the juice fermenting, and then ageing the result in wood. It sits at around 16 to 18 per cent alcohol.
- Why does my dry cider still taste sweet — Alcohol, glycerol and ripe fruit aroma all read as sweetness even when no sugar remains. High alcohol in particular is perceived as sweet before it is perceived as strong.
- What abv counts as low alcohol

Peer-reviewed literature on apple phenolics and cider sensory perception
Various journals · peer-reviewed literature · registered as competent for this subject
Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. Individual papers are cited where a specific number is quoted.

BJCP Beer Style Guidelines — cider and perry categories
Beer Judge Certification Program · classification framework · retrieved 2026-08-24
Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.

The Science of Cidermaking and associated technical writing
Andrew Lea · reference work · passage verified 2026-08-24
Written by a food chemist who worked at Long Ashton on apple phenolics. Unusual among specialist cider writing in that it is primary-research-adjacent: the author is describing work he did, and cites the literature. This is why it is registered at tier 1 for chemistry while a general cider book is not.
Denominación de Origen Protegida Sidra de Asturias
Consejo Regulador de la DOP Sidra de Asturias · designation authority · passage verified 2026-08-24
The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
