What it is
This is the decision about whether a cider represents one harvest or several. A vintage cider is made from a single season’s fruit and bottled as that season produced it, differences and all. A non-vintage cider draws on more than one year, either by blending across a cellar that holds several vintages or by maintaining reserve stock deliberately kept back for the purpose. Some producers do both, releasing vintage bottlings alongside a house cider that is blended to be recognisable every year. The choice determines what the label can say, what the cider is for, and how much stock must be financed.
Why it is used
- Seasons differ substantially in sugar, acid and tannin, and a producer whose customers expect the same cider each year cannot deliver it from a single season’s fruit alone.
- Holding reserve stock lets a difficult season be carried by material from a better one, which is a form of insurance that a single-vintage producer does not have.
- A vintage bottling makes the differences between years visible, which is the point for a maker whose proposition is that the season and the orchard show in the glass.
- Older reserve material contributes developed, integrated character that no amount of time given to a young cider in the same year will reproduce.
How it works
- Blending across years averages the measurable properties of the components in proportion to their volumes, so a target specification can be met from lots that individually miss it.
- Older cider brings a different balance of polymerised phenolics and developed esters, so a small proportion of reserve material changes the character of a blend out of proportion to its volume.
- A fractional system, in which a portion is drawn from a vessel and replaced with younger cider each year, produces a continuously blended stock with an average age that stabilises rather than rising indefinitely.
- Vintage declaration is governed by labelling rules that set what proportion of the stated year the cider must contain, and those rules differ between jurisdictions.

It is worth saying plainly that consistency is a craft goal, not an industrial concession. The assumption that a vintage cider is the serious one and a non-vintage cider is the compromise comes from wine marketing and does not survive contact with how cider is actually made. Holding a house character steady across seasons that differ in sugar, acid, tannin and yield is difficult, requires stock held at cost for years, and demands a blender who can taste a target rather than a bottle. Champagne, sherry and blended whisky are all built on exactly this skill, and nobody describes them as a lesser form of their category. Where non-vintage blending genuinely becomes a lesser thing is when it is used to disappear faults into volume rather than to hold a standard — and that is a description of bad practice, not of the method.
The vintage argument is equally real and is about information rather than quality. A cider from a single named season, from named orchards, tells the drinker something specific: this is what that year did. A cool, wet season and a hot, dry one produce measurably different fruit, and a producer who blends the difference away has removed the evidence. For a maker whose proposition is the orchard, vintage bottling is not a marketing device but the only way the proposition can be tested. The cost is exposure: a difficult year is bottled as a difficult year, with no reserve to lean on, and the producer either releases it or does not release anything.
Between the two sits a family of fractional and reserve practices that are sometimes described as solera-adjacent, and the comparison is useful provided it is not pushed too far. A true solera is a formalised system of stacked stages with fixed fractions drawn and replenished; what most cider producers operate is looser — a reserve vessel or two, topped with each new vintage, drawn on when a blend needs depth. The mathematics is the same in outline: repeated partial replacement gives a stock whose average age converges rather than increasing, and which never contains any single year in isolation. In practice this is more common in France and among producers of long-aged and sparkling ciders than in the West Country, where single-season working and a cellar emptied before the next harvest has been the more usual rhythm.
