What it is
A bench blending trial is a small-scale rehearsal of a blend. Measured volumes of each candidate lot are combined in graduated glassware to a set of ratios, the resulting mixtures are tasted, and the ratio that works is scaled up to tank. The apparatus is trivial — cylinders, pipettes, glasses, a notebook — and the discipline is everything: measuring rather than estimating, recording ratios as they are actually made, tasting in a controlled order, and resisting the pull of the sample that happened to be tasted first.
Why it is used
- Components interact rather than simply adding together, so a blend has to be tasted before it is made at scale; no calculation predicts how a tannic lot will read once acid is added to it.
- A trial costs a few hundred millilitres, while a blend committed to tank and found wrong costs the whole volume and can rarely be unmixed.
- Working through a series of ratios shows where a blend is sensitive and where it is tolerant, which tells the maker how much precision the real blend actually requires.
- A recorded set of trials is the basis for repeating a blend in a later season, when the components will differ but the target will not.
How it works
- Blending by volume in graduated glassware reproduces the tank proportion directly, provided the ratios are recorded as made rather than as intended.
- Tannin-acid and tannin-sugar interactions are not additive: sugar and body suppress the perception of astringency and bitterness, while acidity sharpens both, so a component tastes materially different in a blend than it does alone.
- Tasting blind, or at least in a randomised order, removes the systematic bias towards the sample the taster believes should win and towards whichever was tasted first.
- A freshly mixed blend shows its components separately; giving it time — hours at bench scale, days in tank — allows the volatile balance and the colloidal state to equilibrate before judgement.

Drawing a sample without spoiling the batch
Every sample is a small hole made in the protection around a batch: something goes in, air goes in with it, and cider comes out — so the technique is about drawing a representative sample while putting nothing back and letting in as little air as possible.
Laboratory measurement versus practical measurement
Gravity, temperature, pH and total acidity are all within reach of a careful person with modest equipment; alcohol by volume, sulphur dioxide for a declaration, patulin, methanol and microbiological counts are not, and pretending otherwise is how numbers on labels become wrong.

A fine haze that forms as protein and tannin combine into insoluble complexes, often appearing in a cider that had already been clear.

The method is simple enough to describe in a sentence and is nevertheless where most blending goes wrong. Set out the candidate lots, decide a small number of ratios that bracket the likely answer, make each one by measured volume, label them so the taster cannot tell which is which, and taste. Two failure modes recur. The first is estimating rather than measuring — a splash of this and a little of that — which produces a blend that cannot be reproduced at tank scale and an outcome nobody can explain. The second is bracketing too narrowly: trying a sequence of ratios that differ only slightly and concluding that blending makes little difference, when a wider spread would have shown the sensitivity plainly. Better to start with a coarse series, find where the character changes, and refine there.
The reason a trial is necessary at all is that perception is not additive even where chemistry is. Titratable acidity and total phenolics combine by proportion; perceived sharpness and perceived astringency do not. Residual sugar suppresses the perception of both bitterness and acidity; tannin and acid amplify each other, so a modest addition of a sharp lot to a tannic base can make the base taste much more astringent than its phenolic content alone would suggest; and body masks astringency, so the same tannin reads as texture in a weighty cider and as harshness in a thin one. This is why a lot that seems impossible on its own is often exactly what a blend needs, and why one that tastes agreeable alone can disappear entirely at twenty per cent of a blend.
Two practical disciplines make the difference between a trial that informs the blend and one that merely occupies an afternoon. The first is time. A blend judged in the minute after mixing tastes disjointed — the components are literally still separate in aroma terms — and a trial left to stand and re-tasted later often reverses the initial ranking. At tank scale the same effect operates over days, which means a maker should not panic at a blend that seems wrong the morning after it was made. The second is note-keeping in a form that survives the season: ratios as made, the gravity and acidity of each component, the date, and what was concluded. A blend that worked is worth nothing next year unless the record explains why.
