Some markets recognise a low-pressure tier for tax or closure purposes, but pétillant itself is a descriptive term borrowed from French drinks vocabulary. It describes what a drinker feels rather than a figure any authority certifies.
What makes it this style
- Carbonation is present but low: a prickle on the tongue and a brief bead rather than a persistent mousse.
- The pressure is low enough that a crown cap or a simple cork will hold it, without the heavy glass a fully sparkling bottle requires.

Every style covers a range. This is what legitimately differs between two examples that are both correctly called by this name.

About Pétillant cider
Low pressure is where cider naturally settles when a maker is neither preventing fermentation in the pack nor engineering it. A cider bottled with a little sugar still in solution will restart slowly, generate carbon dioxide, and stop when the yeast runs out of either sugar or nutrition. Left alone, that process rarely reaches the pressures a Champagne-method wine carries; it reaches a bead. Much of what Normandy and Brittany sell, much of what small British producers bottle, and a good deal of Quebec cider sits here not because anyone chose a number but because that is where the biology stops.
The sensory argument for the level is that a light bubble does the useful work of carbonation without the costs. It lifts aromatics off the surface, gives the front of the palate something to register, and keeps a cider from reading as heavy — while leaving the texture of the liquid itself audible. High carbonation, by contrast, can dominate: it sharpens the perception of acid, foams over tannin, and in a cider with delicate fruit can bury the thing the maker was trying to show.
The practical difficulty is control. Natural low-pressure carbonation is an unfinished fermentation held at a point of the maker’s choosing, and holding it there requires either cold storage, a nutrient-starved cider that genuinely cannot go further, or an intervention. Bottles that were pétillant when they left the cellar and are gushing after a warm summer are a recurring problem rather than an occasional accident, and it is the reason many producers who like this pressure level nevertheless reach it by filtering and carbonating rather than by trusting the yeast.
For a drinker, pétillant is a useful signal precisely because it correlates with method. A lightly beaded cider with a fine sediment and a cork is very likely a bottle-fermented cider from a small producer; a lightly beaded cider that is brilliantly clear and consistent is very likely carbonated deliberately to that level. Both are legitimate, and the difference in the glass is usually more about the sediment and the ferment character than about the gas.

What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- The prickle rather than the bubble. Pétillant carbonation is felt on the tongue more than it is seen in the glass, and a cider showing a persistent bead is past this category.
- What the small amount of gas is doing. Even a light carbonation lifts aroma and sharpens perceived acidity, which is why the same cider still and pétillant reads as two different sweetnesses.
- Whether it is stable. Much pétillant cider carries its gas from an incomplete or restarted fermentation, and a cider at this level can be on its way somewhere.
What gets misread
- Reading a light prickle in a supposedly still cider as this style. In a still cider it is a refermentation, which is a pressure question rather than a category.
- Expecting the gas to survive the pour. A pétillant cider poured from height into a wide glass arrives still.
Poured gently and drunk promptly. The gas is the category and there is not much of it.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- Still cider — A minute in the glass. A still cider stays still; a pétillant one keeps a faint prickle on the tongue.
- A still cider that has restarted — Whether the gas was intended. A restarted cider usually also has a new haze and a rising pressure; a pétillant one is stable at its level.
- Sparkling cider — Whether there is a bead. Sparkling cider forms a visible, persistent stream; pétillant does not.

Carbonating cider by letting a second fermentation finish inside the sealed bottle, so the gas is generated where it is going to stay.
Natural carbonation

Priming
Adding a measured, calculable quantity of fermentable sugar at bottling so that the fermentation which follows generates a predictable volume of carbon dioxide.
Tank conditioning
Running a second fermentation in a sealed pressure tank so the gas is generated by yeast but the sediment never reaches the bottle.
Closure selection
Choosing between cork, crown, screwcap, cage and swing-top, a decision that fixes how much oxygen reaches the cider, whether it can hold pressure, and which faults it is exposed to.

Under-carbonation
A cider intended to sparkle that has little or no dissolved gas, usually because the bottle conditioning never started or the closure did not hold.
Unwanted refermentation
Fermentation restarting in a sealed container, generating carbon dioxide that was not planned for and pressure that a bottle may not withstand.
Gushing
Cider that erupts from the bottle on opening, either because it is over-pressurised or because something in it is nucleating the dissolved gas violently.
