Mozzarella is chiefly a texture: a moist, elastic pasta filata curd with a mild, milky, slightly sweet flavour and very little salt or acid. Buffalo-milk versions are richer and more lactic than cow’s-milk ones but remain at the delicate end of the scale.
This makes intensity matching the whole of the problem. Almost nothing needs to be corrected — there is little fat film, little salt, no bitterness — so the only real question is what will leave the cheese audible.
