Sorbitol and why perry behaves differently
Why is perry sweet even when it is fermented dry?
In short
Because a substantial part of the sweetness in pear juice is sorbitol, and Saccharomyces cerevisiae cannot ferment it. When the fermentable sugars are gone, the sorbitol is still there.
Sorbitol is a sugar alcohol — chemically a reduced form of glucose — and it tastes roughly half to two-thirds as sweet as sucrose. In pears it is present in quantities that apples do not approach, and it is a normal transport sugar in the Rosaceae rather than an oddity.
The consequences run through the whole drink: residual sweetness that cannot be removed, additional body, a different relationship between analysis and perception, and a physiological effect at higher intakes.

What sorbitol is and why pears have it
Sorbitol, also called glucitol, is a six-carbon sugar alcohol produced by reducing the aldehyde group of glucose. It is a major photosynthetic transport compound in many members of the rose family, moving carbon from leaves to fruit, and in pears a significant fraction of it accumulates in the fruit rather than being converted onward.
Apples make sorbitol too, and carry it at low levels, but they convert most of it to fructose during ripening. Pears convert much less. This is a difference of metabolism rather than of kind, and it is the reason the two fruits behave so differently in a fermenting vessel.
Saccharomyces cerevisiae lacks an efficient route to take up and metabolise sorbitol under fermentation conditions, so it passes through unchanged. Some other organisms can act on it — certain lactic acid bacteria metabolise sorbitol, and that pathway is implicated in some perry spoilage — but the primary fermentation does not touch it.
What it does to the finished perry
- It leaves sweetness in a perry that has fermented to analytical dryness, so the ordinary dry–medium–sweet vocabulary describes perry poorly.
- It contributes body and a slightly viscous texture, in the way glycerol does, which is part of why perry is often described as rounder than cider at similar strength.
- It means that measuring fermentable sugar underestimates perceived sweetness, so an analysis and a panel will disagree unless sorbitol is measured separately.
- It reduces the need for back-sweetening, and makes over-sweetening easier, because sweetness is being added to a base that already has some.
- It gives spoilage organisms a substrate that survives the primary fermentation, which is one of several reasons perry is less stable than cider.
The physiological effect, stated plainly
Sorbitol is absorbed slowly and incompletely in the small intestine. What is not absorbed passes into the colon, where it exerts an osmotic effect and is fermented by gut bacteria. At sufficient intake this produces bloating and a laxative effect, and the compound is used as a laxative for exactly this reason.
The quantity involved in an ordinary serving of perry is modest, and the effect is dose-dependent and varies substantially between individuals. The older perry literature records the association candidly, and it is part of the traditional reputation of the drink in the perry counties.
This is a straightforward property of a compound rather than a defect in perry, and it is stated here because a reader is better served by knowing it than by encountering it as folklore.
What else separates perry chemistry from cider chemistry
Pears carry citric acid alongside malic acid, which apples effectively do not. A single total-acid figure therefore sums two acids with different tastes and different microbial consequences, and citric acid is metabolised by some lactic bacteria in ways that can raise volatile acidity.
Pear tannin behaves unlike apple tannin at the same measured level, reading as more astringent and less bitter. The class labels borrowed from the apple classification therefore predict the palate less reliably for pears, and the perry pear classification page states this among its own limitations.
Perry juice is also more prone to pectin haze and, in many varieties, lower in acid, which combines with the residual sorbitol to produce a drink that is both harder to clarify and more attractive to spoilage organisms. The reputation of perry as the more difficult drink rests on these specifics rather than on mystique.
