Sugar and the perception of sweetness
Why does a cider with more sugar taste less sweet?
In short
Because sweetness perception is the output of several interacting signals rather than a measurement of sugar. Sourness and sweetness suppress each other, so a high-acid cider tastes drier at the same residual sugar; bitterness and astringency pull in the same direction.
Other components add sweetness without being sugar. Ethanol tastes faintly sweet, glycerol slightly so, and sorbitol — abundant in pears — tastes sweet and cannot be fermented away.
Aroma completes the confusion. A pronounced ripe-apple or cooked-apple aroma reads as sweetness to most drinkers, so a bone-dry cider with a fruity nose is frequently described as sweet.

The interactions
Sweet–sour suppression is the largest and the best established. Adding acid to a sweet solution reduces its perceived sweetness, and adding sugar to an acid solution reduces its perceived sourness. The effect is substantial: two ciders at the same residual sugar and differing by a modest amount of titratable acidity can be classified differently by a panel.
Bitterness and astringency work against sweetness too, though by a different route. Bitterness is suppressed by sugar rather than the reverse, but a tannic cider is perceived as drier because astringency produces a physically drying mouth that a drinker interprets as the opposite of sweet. In practice a heavily tannic cider needs more residual sugar to be perceived as medium than a light one does.
Carbonation sharpens everything. Dissolved carbon dioxide contributes carbonic acid and a trigeminal prickle, both of which push perception towards dryness. The same cider tasted flat and sparkling will often be placed a category apart.
Why this defeats a sugar-based scale
It is entirely reasonable to define dry, medium and sweet by residual sugar bands, and several schemes do. But a sugar band predicts what a drinker will perceive only weakly, because the other four or five variables move independently of it.
This is one reason the British and American sweetness vocabularies have never been fixed in law: a producer applying a sugar threshold mechanically would end up labelling ciders in ways their own customers found wrong. Producers instead calibrate against their own range, which is internally consistent and not comparable between houses.
The French decision to define the categories on alcoholic strength is a different response to the same problem. In a tradition where sweetness comes from arrested fermentation, strength and residual sugar are directly linked, and strength is the easier and more robust thing to measure. It works because it encodes an assumption about method.
The perry case
Perry is where the divergence between measurement and perception is largest. Sorbitol is not a fermentable sugar and does not appear in a fermentable-sugar analysis, but it is sweet and it is present in quantity. A perry can therefore be analytically dry and perceptibly sweet at the same time, with no contradiction.
This is why sweetness terminology transfers badly from cider to perry, and why perry described as dry surprises drinkers who expect the austerity of a dry cider. It is also why back-sweetening a perry needs a lighter hand: sweetness is being added to a base that already carries some.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
