How carbonation changes taste

Why does the same cider taste different when it is fizzy?

In short

Because carbon dioxide is not just texture. Part of it reacts with water in the mouth to form carbonic acid, which stimulates the same sour-sensing cells that acids do, so a carbonated cider tastes sharper than the identical liquid poured flat.

Carbon dioxide also stimulates the trigeminal nerve directly, producing the tingling and mild sting that is felt as fizz rather than tasted. That sensation is nociceptive — it is registered by the same system that detects chilli and menthol.

The consequences run through the whole profile: perceived sweetness falls, acidity and astringency rise, aroma is delivered faster and lost faster, and the drink seems lighter in the mouth.

The three mechanisms

The first is chemical. Dissolved carbon dioxide is in equilibrium with carbonic acid, and the enzyme carbonic anhydrase, present on the surface of taste cells, catalyses the conversion. The protons released stimulate sour-sensing cells, which is why carbonation produces an acid taste that is genuinely perceived as sourness rather than merely associated with it. Blocking the enzyme reduces the effect, which is the experimental evidence for the mechanism.

The second is mechanical and neural. Bubbles nucleating and bursting against the oral surfaces stimulate free nerve endings of the trigeminal nerve, producing the tingle. This is a somatosensory signal rather than a taste, and it accounts for the sensation people mean when they say a drink is sharp on the tongue in a way that has nothing to do with acid.

The third is aromatic. Rising bubbles carry volatile compounds to the surface and release them into the headspace, so a sparkling drink presents its aroma more forcefully and more immediately. It also loses it faster, which is why a sparkling cider left standing smells progressively less of anything while a still cider opens up.

What producers do with it

Because carbonation shifts perceived sweetness downwards, a cider intended to taste medium when sparkling needs more residual sugar than one intended to taste medium when still. Producers who make both a still and a sparkling version of the same cider routinely sweeten them differently.

Carbonation is also used to lift a cider that would otherwise seem heavy. A high-tannin, low-acid cider can read as flat and thick when still, and gas supplies the sharpness the acid does not. Conversely, a sharp, low-tannin cider can become aggressive when carbonated, and is often better still.

Serving temperature interacts with all of this, because carbon dioxide is more soluble in cold liquid. The same cider served cold releases less gas into the mouth and headspace than it does warm, so a cold sparkling cider is both less aromatic and less prickly than the same bottle after fifteen minutes in the glass.

The Spanish case, which is not carbonation at all

Sidra natural is still. The foam raised by pouring it from a height — escanciar — is not dissolved carbon dioxide coming out of solution; it is air entrained into the liquid by the fall, forming a brief mousse that collapses within seconds. This is why the pour produces its effect only when done from a height, and why the small measure is drunk immediately.

What the pour achieves is a short-lived aeration that releases aroma and, according to the tradition, softens the perception of the cider’s sharpness and volatile acidity. The mechanism is aeration and agitation rather than carbonation, and the two should not be conflated: a sidra natural that fizzed would be a different product, and sidra espumosa is that separate category.
