What temperature should cider be served at?
In short
It depends on what the cider is built on. A light, sharp, sparkling cider shows well cold, because cold suppresses aroma and sharpens the impression, which suits a drink whose interest is freshness. A tannic, complex still cider shows very little at fridge temperature and considerably more at cellar temperature.
The mechanism is straightforward. Volatile compounds evaporate faster as temperature rises, so a warmer drink delivers more aroma. Sweetness perception also rises with temperature, while bitterness and astringency are less affected, so a cold tannic cider presents its bitterness with less to balance it.
The practical consequence is that a cider served straight from a fridge is being shown at its least expressive, and that letting it warm in the glass for a few minutes is usually informative.

Working temperatures by style
The general rule is that the more a cider depends on aroma and structure, the warmer it should be served, and the more it depends on refreshment, the colder. A light sparkling cider at 4–6°C is being served for its crispness; a tannic still farmhouse cider at 10–13°C is being served so that its aroma and its sweetness have a chance to appear.
Traditional serving practice generally reflects this without stating it. Cask cider in a West Country cider house is at cellar temperature. Sidra natural is served cool but not cold, at a temperature at which its volatile character is present rather than suppressed. Apfelwein in Frankfurt is served cool. Ice cider, which is intensely sweet, is served properly cold, because cold suppresses the sweetness that would otherwise dominate.
None of these is a rule, and the useful experiment is to pour a small measure and taste it as it warms. Most ciders change noticeably over ten minutes in the glass, and which point a drinker prefers is a matter for them.
Why cold is used to hide things
Because cold suppresses aroma and blunts sweetness, it also suppresses the aromatic signals by which faults are detected. A cider with a modest oxidative or solvent character will show it far less at 3°C than at 12°C, and a drink served very cold is being presented with much of its information withheld.
This is not automatically cynical. Serving cold is the convention for a large part of the mainstream category, and it suits products built around freshness and carbonation. But it does mean that a judgement formed on a heavily chilled sample is a judgement about a narrow slice of what the cider is.
The corollary is that anyone assessing a cider seriously should let it warm. Sensory panels control temperature precisely for this reason, and competition judging protocols specify it.

The single most useful open cider dataset CiderHQ has found. The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
