What is the difference between bottle-conditioned and force-carbonated cider?
In short
In bottle conditioning, a small quantity of fermentable sugar and viable yeast is sealed into the bottle. The resulting secondary fermentation produces carbon dioxide that has nowhere to go, so it dissolves. The yeast then settles as a sediment.
In force carbonation, carbon dioxide is dissolved into the finished cider under pressure in a tank, and the cider is filled counter-pressure. No fermentation occurs in the package and there is no sediment.
The difference in the glass is real but smaller than often claimed: dissolved carbon dioxide is the same molecule either way. What differs is the presence of lees, the ongoing contact between cider and yeast, the practical precision of the carbonation level, and the pressure risk if a conditioning bottle is over-primed.

A misconception worth clearing up

Force-carbonated cider has "fake" bubbles that feel different in the mouth.
What is actually the case: The dissolved gas is identical. Differences in perceived texture come mainly from the amount dissolved, the temperature, and the presence of yeast and its by-products, not from where the molecule originated.
