Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The Carse of Gowrie, the flat ground on the north bank of the Tay between Perth and Dundee, is a genuine microclimate and the reason Scotland has an orchard district at all. The Sidlaw Hills shelter it from the north and west, the estuary moderates temperature at both ends of the season, and the low, level ground sits in one of the drier parts of Scotland because the western uplands have already taken most of the rainfall. That combination extends the effective growing season by enough to ripen fruit that fails a short distance inland. It does not extend it far: accumulated summer heat remains low by English standards, so fruit runs higher in acid and lower in sugar, and late-ripening varieties are unreliable. Frost on the flat carseland is a real spring risk, and the estuary’s moderating effect is what keeps it from being worse.
Soils
Deep, fertile, moisture-retentive carseland silts laid down by the Tay give the district unusually good growing ground, well suited to fruit and to soft fruit in particular; the rising ground of the Sidlaws behind carries thinner, colder soils.

History
How cider making here came to take the shape it has.

About Perthshire
Perthshire holds Scotland’s only substantial historic orchard district, and it is worth understanding on its own terms rather than as a northern outpost of English cider country. The Carse of Gowrie grew fruit for six centuries or more, at a scale that supplied Scottish towns, and it did so almost entirely for the table and the kitchen.
The microclimate is the whole explanation. Shelter from the Sidlaws, moderation from the Tay estuary, deep carse silts and comparatively low rainfall combine to extend the season enough for apples and pears to finish where they would not a short distance away. The extension is modest, however, and it shows in the fruit: high acid, moderate sugar, and no reliability at the late end of the season.
Because of that, Scotland accumulated a body of apple varieties adapted to a short cool season, and no body of cider varieties at all. There were no tannic bittersweets to be pressed, no surplus that needed fermenting, and a rural drink economy already supplied by barley. The absence of a Scottish cider tradition is a rational outcome, not an oversight.
Cider in the district today is a recent craft activity working with dessert and culinary fruit, and the resulting drink is sharp, light and low in tannin. That composition is worth stating plainly: it is what this fruit makes, and reading it against West Country expectations describes it as a deficiency when it is simply a different raw material.

- What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
- Can you make cider from shop bought apple juice — Yes, provided the juice contains no preservative — check for potassium sorbate or benzoate on the label. Pasteurised juice ferments perfectly well once yeast is added, because pasteurisation removes the organisms but not the sugar.
