Oak lactones
The coconut-and-wood compounds of oak, whose concentration depends more on which species of oak the barrel was made from than on anything a cidermaker does.

About Oak lactones
What most people identify as oak is one family of compounds: the oak lactones, sometimes called whisky lactones because they were first characterised in barrel-aged spirit. They smell of coconut, of cedar and of freshly sawn wood, and they are the reason a cider that has been in a new barrel is identifiable as such within a second of smelling it.
Their concentration in the wood is a botanical fact rather than a cooperage choice. Quercus alba, the American white oak, carries several times what the European oaks carry, so a cider matured in an American barrel reads far more overtly of coconut than the same cider in a French one. Cidermakers who want wood texture without wood aroma choose accordingly, or choose used casks.
The compounds also exist as two isomers whose aromas and detection thresholds differ, and toasting changes the balance between them as well as the total. This is why oak character is described with several different words by different tasters looking at the same cider: they are not disagreeing so much as responding to different members of a mixture.
