What causes it
Vanillin is a phenolic aldehyde produced by thermal degradation of the guaiacyl units in oak lignin during the toasting of barrel staves. It extracts readily into cider and has a low threshold, so it is among the first oak-derived compounds to become perceptible. Its concentration falls with each use of a barrel, which is why new and first-use barrels give it strongly and traditional old vats give almost none. A second and unrelated route is direct addition of vanilla or of vanillin as a flavouring, which is declarable.

Vanilla is the most recognisable single marker of new-oak contact in cider and a reliable way to distinguish barrel-aged products from vat-matured traditional ones.
It reads as sweetness, like the fruit esters and the honeyed compounds, so a barrel-aged dry cider is frequently described as sweeter than its analysis supports.

- Does cider get better with age — Some does. Tannic, dry, bottle-conditioned ciders and ice ciders can gain for several years. Light, fruit-driven and commercially filtered ciders lose their aroma and do not gain anything in exchange.
