About Vanillin
Oak lignin breaks down under heat into a set of aromatic aldehydes, of which vanillin is the most recognisable. A toasted barrel therefore holds a reservoir of vanilla that transfers into whatever it is filled with, alongside eugenol, the guaiacols and the lactones.
What makes it instructive is that yeast interferes. Active fermentation reduces vanillin to vanillyl alcohol, a compound with far less aroma, so a cider fermented in a new barrel emerges with markedly less vanilla character than a cider fermented in stainless steel and then transferred to the same barrel. This is a genuine and often unremarked difference between two practices that are described in the same words.
A barrel is also a diminishing asset. The extractable compounds are finite, and by the third or fourth fill a cask contributes little more than slow oxygen ingress and whatever microbiology it is carrying. In much traditional cider that is precisely the point — the barrel is a vessel, not a flavouring — and expecting vanilla from an old cider cask is a modern misunderstanding of what those barrels were for.
